First off thank you to the woman for letting me in 30 minutes before closing tonight to order some pizza. I was having a craving pretty bad. She was friendly, helpful and polite with her service. As for the review I ordered 2 large pizzas and just had 3 slices of each. The supreme and the Hawaiian. As I was eating I noticed an off flavor. I initially thought it was the meat. Maybe it was not the freshest. But then I went to the Hawaiian and noticed it too. It is not the meat it is the dough. Has the flavor of being over fermented and getting very sour. I worked in a restaurant so I know about rotating your food stock to use up ingredients as best you can to keep food waste down. I don't know how you store dough in the coolers. But it seems like it isn't chilled enough to stop the fermentation process. I noticed the same flavor after I started baking sour dough bread myself and had a miss hap of fermenting my first dough way to long. Had a very distinct overly sour flavor and was not great. But I learned my lesson. Maybe freeze your doughs at a cooler temp sooner? Both my pizzas have that distinct sour flavor of almost being bad on the palate. It is still edible in my mind. But definitely could use some improvement for freshness. Please pass this on to your manager so some changes can be made. Fresh pizza brings back happy customers. 👍 The cheese and the veggies are fine. Slight chew in the dough per bite which is nice so cooking is good.
