Restaurant located in the sumptuous Fairmont Hotel at Lake Louise.
We ate very well and enjoyed the chocolate fondue for dessert.
A big thank you to the Quebec waiter who was able to advise us throughout the meal, in French. Which unfortunately was not the case with the oenologist who curtly replied that if we did not speak English, he could not help us. An inappropriate response when you find yourself in this internationally renowned hotel.
Negative point: $40 parking for a dinner of around 2 hours.

Our dining experience was amazing. The views and staff were great. I had the beef tenderloin and it was one of the best meals I’ve ever had. Could cut beef with a butter knife. So tender. My husband had the bone in veal Wienerschnitzel. He said best he’s had since he was in Germany.

We took takeout, and the experience was not pleasant. A roast beef wrap that had a lot of fat, inedible... it really made us sick. Furthermore, despite buying food, they do not allow you to use the bathroom, they are closed, only if you are in the hotel, regardless of whether you use the take away service. Of course they ask you for a tip... and being a takeaway the service is minimal or non-existent... only when paying and even more so if they don't even allow you to go to the service or use the Wi-Fi network.

The staff and ambiance were very nice. Unfortunately, this is where my nice comments end. The food was stunningly devoid of any flavor whatsoever. I’m vegetarian so that definitely factored into it. The raclette was particularly disappointing. It was literally just plain boiled potatoes with hardened cheese over it. Not one spice or herb in sight. Seemed like a struggle meal made by someone who has never cooked before. Yet the prices are sky high. Vegan schnitzel was $65 CAD (got it to go as I was feeling queasy mid meal) with zero flavor and a mystery goo sauce (flavor reminiscent of thickened water). The salad was fine. Not suited for anyone who enjoys flavors in their food. Even the bread was not good. I cannot comprehend how you can screw up bread. I’ve been to Switzerland and this is in no way representative of the cuisine.

I would also like to comment on the vegan schnitzel. The breading was technically very good and the mushroom sauce was okay. But I received way too much tofu - it was an entire block of tofu that had been cut in two. The steaks should have been much thinner. The tofu or the breading also needed to be salted as tofu itself has no flavor. Definitely a vegan entree designed by a chef who cooks meat lol.

The cheese fondue was good. The chocolate was a bit disappointing. Service was fine.

We were guests at the hotel and expecting this to be a great dinner. The view is great. Excellent ambience overall. Unfortunately, the food was frankly quite bad. We had the fondue, which was the most odd and bland tasting fondue I've ever had (we've had fondue in Europe, and all over the USA and Canada). The cocktails were not good either. Our waiter was quite nice, but looked a bit busy. The prices are through the roof expensive for what you get. I would certainly not recommend eating here.

HIGHLY RECOMMEND!
This was our favorite restaurant at Fairmont Chateau Lake Louise. We tried all of them except for Louisa. We ordered the Chateau Experience, which was fondue, two entrees, and chocolate fondue. For the entrees we ordered the Filet Mignon and the Schnitzel Chicken Cordon Bleu. Both were delicious, but the chicken dish was such a neat blend of schnitzel and cordon bleu that it was definitely our favorite.
The service/staff was also amazing. Our waiter, Asher, was accommodating, friendly, made good suggestions, and even let us try Ice Wine since we were celebrating. I would definitely recommend Walliser Stube and requesting Asher as your waiter.

The service and atmosphere are great. The food is mediocre because the one vegan option is vegan schnitzel and it is lacking in flavour. They need to drastically work on the vegan options because there is a lot of potential. They could offer vegan butter for the breads, and vegan cheese and chocolate fondues. They can offer a salad option. They can use innovative vegan sausages for the main. There are many exciting ways to make German food vegan and they should use the opportunity!! All that said, the service was really amazing!

Edit - if you want an excellent meal that is well worth the price, make a reservation at the Cathedral Mountain Lodge, which is about 20 mins north of Lake Louise. So much better on every level

I was excited to eat here, but left overall disappointed. First, the cocktails are good. The potato soup was also delicious. Jumbo Shrimp cocktail, it's shrimp cocktail so nothing spectacular (which is fine). The Raclette, was just a hardened cheese on potatoes. Totally not worth the $28 price. And then there is the Wiener Schnitzel, it was pretty good but nowhere close to being worth the $85. Seriously, if it was $50, maybe. But $85, skip it.

Overall, for the price, it's a disappointment and I would not recommend it. I've had much much better places at this price point.

Really wanted to love it but sadly our inattentive waiter spoiled it for us. My steak was raw not medium rare and would have let him know but he never came back to check on us. At least the view was beautiful of Lake Louise.

We recently dined at this restaurant to sample their "Chateau Winter Experience" three-course menu, and it was a delightful culinary adventure from start to finish. Starting with the appetizer, the traditional cheese fondue was a first for us, and it perfectly met our expectations, served with an assortment of fresh veggies and bread for dipping. For our mains, the Alberta beef tenderloin was perfectly cooked and incredibly tender, while the schnitzel was satisfyingly crispy, perfectly complemented by a savory mushroom sauce. The baked Louise dessert was a delightful conclusion to our meal. However, what truly set our experience apart was the exceptional service; the staff were attentive, bringing a flower for our anniversary, and our server Asher was remarkably knowledgeable, expertly guiding us through the menu. Overall, the visit was an outstanding dining experience that we highly recommend.Thank you Asher and all the staff at Walliser Stube!
