Went in on a Wednesday and they had a decent selection. I imagine Friday will have the biggest selection. However, we were able to walk out with 2 sets of ribeye steaks and some ground sirloin for burgers, a great sauce for some salmon, and fudge.
All cooked up great, good quality beef. As expected at any retail butcher, they were pretty expensive, but we found them worth it.
We will be returning when we pass through the area.

Great staff! They know their stuff. Huge selection with just about every sauce/rub/marinade possible. I went because my boss gave me a gift card but I have already been back twice. One of the employees convinced me to try bone marrow (after I'd asked a question about it), and I'm freaking hooked! I was licking the bone clean like a dang caveman! I will say that meat costs more there. But you pay for quality. Just like everything else.
