I really wanted to like this place, loved the classic look of the building, I had heard some good things and came with high expectations, but I was left very disappointed. I left with 4 petit fours, a cupcake, and a slice of red velvet cake. The petit fours and the red velvet cake tasted strongly of some form of extract, possibly almond or vanilla, but they had that very strong alcohol taste that was very overpowering. The cupcake tasted just like what my mom made at all my birthdays growing up with a boxed mix and icing from Walmart, and I really do mean that it tasted exactly the same, even brought back memories. As great as that is, it is not what I was expecting from a bakery. I won't come here again sadly, I recommend Guncles bakery down the road, far better taste and surpasses expectation as a gluten-free bakery.

Don’t waste your time or money. IMO Pollman’s never recovered from the roach infestation and unsanitary conditions reported by the Board of Health. Recently picked up pre-order cake handed to us in box by man, who said he was owner, looked unsanitary, wearing dirty clothes, and didn’t wash hands before opening and handling some other unboxed cakes as I observed. I complained about the appearance of my cake like “Birthday” being spelled wrong and the cake was an awkwardly weird square shape, not standard rectangular ¼ sheet cake size. This was also a “remade” cake because they failed to put the edible image on the first one. He said “take it or leave it.” Took it to birthday girl and after a taste, we trashed it - tasted to us like stale dry cornbread with food colored lard as frosting. Figured they didn’t really remake cake, just changed the frosting on an old cake that had expired. If you want a quality specialty cake, go somewhere else. Anywhere else.

I buy the Chantilly cake slices and Pollman has the best Chantilly cake in the city. Who ever made this past Sunday's cake really went above and beyond what they normally prepare. Keep up the great work.

My lovely friend Bailey works at Pollman's and she brought an array of goodies for a bridal party I was a part of. The savory scones were DELICIOUS. I had never heard of a savory scone before so I was the first to grab one up. She also brought a few different danishes and they were soo soo good. Huge thank you to Bailey for making and bringing yummy yummy treats for us!

When visiting Mobile a trip to Pollman’s is a must! From the notable king cake to macrons to the seasonal pumpkin gooey bars, Bailey really puts the charm in the treats for this Mobile historic stop! Her warm and welcoming demeanor is just the icing on the cake! Always looking forward to trying her new treats and and indulging in the classics! 5/5 stars!
Visiting Pollman's is always a wonderful experience. Locals know it is the best bakery in the area. They have evolved so much in a short time - a large part being the warm new owner, Vance, and his exceedingly talented baker, Bailey.

Best bakery in mobile! Employees are always nice and welcoming. Very fast and friendly! I ordered a cake for my office Reagan made sure it was ready and the cake was beautiful. Reagan’s customer service skills are outstanding she is lovely. I will be back again.

I was so indecisive on what to try because everything looked so amazing. One of the workers I believe her name was Reagan made some suggestions. I was NOT disappointed. The apple fritter and lemon square was delicious, hands down my favorite. When I come and visit I will definitely be back to grab more tasty treats.
