I ran an experiment here. I ordered an 11oz sirloin steak and asked that it be cut into three equal pieces, each piece cooked to a different degree. One was well done, one medium rare, the final blue rare. The server and the chefs had no issue with this experiment and even helped make it happen when it was a bit too busy to do it the way I intended.
