Wonderful bakery. Everything except the chocolate chip cookies is made with sourdough starter. Several types of bread, croissants, pastries. They mill their own flour.

Time and time again, we make the drive up to downtown Mesa to support and indulge in all things that Proof Bakery has to offer.

Everything is always delicious, freshly baked with a quick turnover. Remarkable color on all loaves, depth of flavor, high quality ingredients that reflect in the products. The seasonal offerings are special, stunning and delicious.

It's about time I wrote a review, heads and shoulders above the rest.

I love to support local but this business has been hit or miss for me. I came across the business at a local market a year or so ago and later visited the physical storefront nearest me. Some of their products are amazing and readily available, some of their products have been so-so, and often times they’re totally sold out and I can’t speak to the product whatsoever. Sometimes I’ve gone to the physical location and have had a friendly wonderful experience, and on other occasions, the customer service has been very much lacking. I would say, maybe give this place at least two tries and hope at least one goes well.

Ok, sadly this has gone down hill. I am updating to one star. Full disclosure I did not place my holiday pre-order two weeks in advance. However, I did go down to the bakery, was first in line, and was told they didn’t have any extra because of a baking issue and barely got the pre-orders filled. Ok, so to be clear, I need to know my holiday plans two weeks in advance in order to get certain items from here BUT it’s totally ok if they have baking snafus the day before? A little reciprocity goes a long way, you want our understanding with bakery issues but have no understanding for those of us that can’t plan for Christmas the Monday after Thanksgiving? Moreso, I was really planning to let this go, but then I get my 10th email of the week from this place immediately after getting home sans bread - hey no worries, no pre-order, no problem, we have plenty, ignore the rain and come on down! What?!?! I was there first, I was there early - in the cold, in the rain, and you said you had NONE. Now you’re sending mass emails that you have plenty?! Here’s the thing. You miss the mark. This bakery tries new stuff for the holidays, makes tons of it, makes it seem like the most incredible thing ever, and from past experience, it’s not. Your staple items are amazing and it would be great if you could focus on those so you have enough and a little extra for those of us day of’ers rather than making all this extra stuff. Less Korona, more staple items. And to make matters worse, I got the email, tried to call to confirm - hey, I was just there and you said you had none, before I go drive back over there, can you at least confirm? Nope, of course not. Why? The phones are shut off to allow employees to focus on such a busy day. Well going forward, I will not be contributing to the hustle and bustle of this place, I will definitely be finding someplace new. This business got too big too fast and now has too many locations, and it’s just not the place it was. Time to find a new local bakery to support.

This is the best bakery in town! When they opened a few years ago I became a very loyal customer. Everything is delicious! I picked up lemon curd danishes this morning along with my rosemary twists and rolls for Thanksgiving.

This is like stopping by your neighborhood bakery if we all walked cobblestone streets and lived in flats. Yummy bread, friendly people and new things to try. I love coming here whenever I’m downtown because a hearty loaf of beautiful sourdough goes with everything - or eats like its own meal. I usually pick up another to share with someone else and then one of their pastries. Everything here is good.

Baguettes are WAY off guys. Gotten many here over the past year, last 2 I got have been poor. Crumb was weak, not enough rise, tips of baguette are not symmetrical/overall form a bit sloppy in general, and whole thing lacked the right crunch, chew, and flavor. I'm sure there's some new people in the shop but this was a very disappointing bread. I won't be back for a few weeks or months when hopefully the new ppl have learned or the quality control is better. I don't wanna leave a bad review cuz I know this shop can do better but there has to be an FYI for owner. Please get the baguettes back to their previous quality!!!!!
