This is a great bakery that does all their baking with sourdough. They have great everyday products, but the real treat is to pick up special pastries that are only offered for limited times during the year. Some of are the Matcha and Irish cream croissant, twice baked maple croissant, and cinnamon rolls.

Sour Dough Pastry. Only one visit, but if I lived within a short distance, this would be my daily spot. A short list of pastry items, quite a bit more in bread loaves, it seemed.
Just as well we found this on the way to the airport, and no space for a loaf of bread. Rats!
Friendly staff. No room inside for a dine-in experience.
Nothing short of impressive.
Worth mentioning, if you get 6, they take a buck off each. And, their Chocolate Chip Cookies, the shareable size of small saucers are NOT sourdough.
Wish this was in my home town.

Haven’t tried the bread, but the pastries and pizza slices were extremely delicious. The pizza was tender with a flavorful tomato sauce, and crispy pepperonis

Love love love everything about this bakery and their amazing sourdough. Growing up in a German household, this is what I grew up eating (and add a few variations too). My go to breads are the multigrain, sandwich loaf, country sourdough and as a special treat when I pick up….plain croissant. Love that I can place order ahead and pick up exactly what I need/want. Highly recommend!!!

Good bread. Great chocolate cookies. Friendly helpful staff.

I happened to find this gem while visiting family! We didn't want to show up to our visit empty handed and thought we would pick up a few pastries. Needless to say, Proof is more than just pastries. The sourdough bread is fantastic and the croissants were delicious. Can't wait to come back to visit our relatives so we can bring some goodies home with us.

The lady at the front was really sweet ! I got the chocolate croissant and I’ve never had a sourdough croissant and it was amazing ! This place is so cute

A friend had brought some goodies from Proof Bread for a holiday get-together and wow am I impressed!

Peppermint croissants, pain au chocolat, lemon danishes, salted rosemary twists, and some chocolate sea salt cookies were shared. I had grabbed one of each to have at home with some coffee and oooooh! I'm a fan! The peppermint croissants had me making heart eyes and let me tell ya, my skirt flipped. SO GOOD! I'm pretty sure it's a seasonal item though so a part of me is misty eyed that I will have to wait for the next holiday season to get my hands on the peppermint croissant. Santa surely would have enjoyed a plate of peppermint croissants.

I need to pop into this DT Mesa spot. So many delicious pastries and bread!

Big fan of this place and the content they post on YouTube. My mom recently went to Mesa and was kind enough to bring sourdough and some pastries back to WA. Needless to say it was incredible. The flavor, crust, shaping, baking was all perfecto.
