My wife and I spent one night at Polo Diablo one the way from Vegas to Santa Fe. The facility is just days away from closing down for at least a year while the new owners completely renovate the resort. We made a commitment to return when it reopens. The site has great potential. The food was good, but not great. The wine we ordered from the menu was unavailable. The servers were confused about which wine it was I had to help them look for it. It was a bit loud inside and air conditioner was blowing on our table the entire meal.
Our waitress was great and the manager was friendly. But to serve a martini in a water goblet was unacceptable. The food was not great. Meat temperature was not accurate. I think k the restaurant was very understaffed the night we were there. It did not help that they had three large bachelorette parties. It made it for an uncomfortably loud meal
