Seek out this treasure of a taco shop! A diamond in the rough! A “Vaca” is a quesadilla with meat: a must try! The birria broth is particularly stomach—not greasy nor too spicy—but if you prefer swing by the fresh salsa bar to spice it up to your liking. The Chile Colorado taco is to die for!

We were passing by Tucson and decided to go and try Taqueria la Vaca best decision ever. It was so delicious and we are from California and I mean they sell the best queso birrias. I will surely visit again. The food is amazing tacos de cabeza and the menudo is delicious.

Today, I tried their birria, which was bursting with rich, savory flavors that felt like a warm embrace of traditional Sonoran cooking. On a previous visit, I had the cabeza, and it was equally outstanding—tender, flavorful, and perfectly prepared.
What makes Taqueria La Vaca stand out is its dedication to quality and authenticity. The handmade corn tortillas are exceptional, reflecting the essence of Sonoran cuisine—they’re fresh, soft, and carry that unmistakable homemade taste. Really delicious tacos, burros, with slow cooked meat at the ready. Plenty of seating. Super fast staff in the kitchen.
