I recently had the pleasure of dining at Gibsons Pho Le, and I must say, it was an exceptional experience from start to finish. From the moment I walked in, the warm and inviting atmosphere immediately made me feel at home. The staff were incredibly friendly and attentive, ensuring that every detail of my visit was perfect.
The menu offered a fantastic variety of traditional Vietnamese dishes, but I couldn't resist trying their pho. I opted for the classic beef pho, and it did not disappoint. The broth was rich and flavorful, perfectly balanced with tender slices of beef and fresh herbs. The portions were generous, and every bite was a delightful blend of textures and tastes.
What truly stood out to me was the quality of the ingredients. Everything tasted incredibly fresh, from the crisp bean sprouts to the aromatic basil leaves. It was clear that a lot of care and attention goes into preparing each dish.
I also tried their spring rolls, which were light and crispy, paired with a delicious dipping sauce that added just the right amount of tangy sweetness. To round off the meal, I had a refreshing iced Vietnamese coffee that was the perfect blend of strong coffee and sweet condensed milk.
Overall, Gibsons Pho Le exceeded my expectations in every way. The combination of excellent food, friendly service, and a cozy atmosphere makes it a must-visit. I will definitely be returning soon and recommending it to all my friends.

Solid food, pretty standard service, just can't give it 5 stars because I was spoiled for choice when I lived in Vancouver for pho, and this place simply isn't quite as good as some of those. That said, it'll satisfy a craving if you need some good soup or vermicelli. Also their spring rolls are very good.

I first tried here about 2 years ago shortly after they opened. The basil, lime and sprouts were rotting. I figured I would give them another chance to see if they improved but I was let down. Paid $6 for extra rare beef and got no such thing. Depressing portion for $33. $40 after tip (take out). Broth was not bad but almost no meat especially considering I paid for extra. Maybe 12 sprouts in total, and half of one slice of lime. About half a large onion sliced on top of the noodles to fill up space. I try to support small businesses and wish they could succeed but I feel robbed. It's a difficult business especially in a small town but I hope they can improve and find success. From replies it sounds like they import a lot from the city. It's a shame that I get 2-3x the meat portions from many businesses on lower mainland who pay much higher rent cost. I hope they can try to source more from local butchers and improve value. If they do I will come here all the time and recommend to all my friends and family. I hope one day I walk by this place in the mall and see it filled with customers :)
