Where do I even begin. This experience was just that…an experience. Every single detail of our meal was meticulously thought out and considered. Chef Lee loves his craft and his passion for quality shows. From the moment you walk through the door it’s clear the night is one to remember.

Lee’s also assisted by his wonderful wife only making the experience that much better. It felt more like we’ve been invited to dinner at their home than at a restaurant.

Every ingredient, plate, cup and detail imaginable was carefully selected. You’re truly paying to watch someone prepare food they love and it last felt in each bite.

I haven’t left this wow’s after a meal in a long time and the recognition chef Lee and his team have gotten is well deserved.

We’ll definitely be returning again as the season changes to experience this again…CANT WAIT!!!

My wife and I visited Sushi Hyun the evening of our wedding, and it was the perfect way to celebrate. From the moment we arrived, we were impressed by how immaculate the space is. Chef Hyun has thoughtfully curated every detail, including custom pieces from Japan and beautiful hinoki wood for the tables.

The omakase experience was truly exceptional. Chef Hyun and his wife run the restaurant together, and their hospitality made us feel incredibly welcomed. Over the course of 20 dishes, we were completely satisfied in a way I’ve never experienced before at a tasting menu. Every bite was perfectly portioned and timed.

What sets this experience apart is Chef Hyun’s passion and attention to detail. He took the time to explain each component of every dish, sharing the story behind the ingredients and their origin. The progression was flawless. Each course flowed seamlessly into the next.

One highlight that stands out: his egg dish was phenomenal. I’m not exaggerating when I say it was the best egg dish I’ve ever had in my life, and it reignited my appreciation for something I’d eaten countless times before.

The intimate setting, limited to just six guests per seating, allows Chef Hyun to truly connect with each diner. This thoughtful approach makes the experience feel personal and special rather than rushed.

At the end of our meal, Chef Hyun asked for our feedback to help improve for future visits. His menu changes seasonally, which gives us even more reason to return throughout the year to experience different ingredients at their peak. Chef Hyun and his wife were so thoughtful that they even took photos of us together to commemorate our special evening.

We’re already planning to return for our anniversary. Wishing Chef Hyun and his wife continued success and happiness. They’ve created something truly special.​​​​​​​​​​​​​​​​

Sushi Hyun Omakase is easily one of the best dining experiences in Vancouver right now. It’s an intimate spot with only six seats, so the whole night feels calm, focused, and personal. The space is minimal and elegant without trying too hard — everything just feels right.

Service is flawless. The staff are professional but relaxed, and the pacing is spot on. You never feel rushed, and every course comes out at exactly the right moment. The chef explains each dish briefly, just enough to make you appreciate the care and technique behind it.

The food is next-level. Every bite tastes clean and balanced. Highlights for me were the chawanmushi, the sashimi, and the nigiri lineup — the rice was perfectly seasoned and the fish melted in your mouth. The uni hand roll near the end was incredible, and the small bowl of rice broth to finish was a surprisingly comforting touch. Dessert was simple but perfect — fresh melon and matcha ice cream.

What stands out most is how consistent everything feels. There’s no gimmick or show — just skill, attention to detail, and real respect for the ingredients. It’s not cheap, but for what you get, it’s absolutely worth it.

If you’re serious about sushi, this is a must-visit.

I visited Sushi Hyun last weekend and was really impressed with everything. The sushi was incredibly fresh, beautifully presented, and full of flavor. I ordered the chef’s selection, and every piece that came out was better than the last. The salmon and toro especially melted in my mouth — so buttery and rich. The service was also excellent. The staff were kind, attentive, and made great recommendations when I wasn’t sure what to pick. I loved how clean and calm the space felt too. It had that traditional, quiet vibe you want in a quality sushi restaurant. Sushi Hyun is now one of my go-to spots when I’m craving fresh, authentic Japanese sushi. If you're looking for high-quality ingredients and great service, this is the place.

From the moment you step into Sushi Hyun, you are transported into a space that embodies the essence of wabi sabi. The attention to detail is impeccable, from the counter crafted with imported Japanese wood, wall tiles to all the hand crafted tableware.

Chef Hyun guided us through an omakase journey and every bite was exceptional leaving no doubt that this is one of the top omakase experiences in Vancouver. Oh yes and the draft beer is a must.

Celebrating my birthday here was a truly memorable experience, and I’m grateful for the care and passion that went into every moment. Thank you, chef Hyun, for an extraordinary evening—we will definitely be back!

Update: we have been back several times after my initial review - best omakase in Vancouver 10/10.

This is not a dining experience! This is an art exhibit where you can consume the art that is produced in front of you by a master.
The place and the experience is very intimate, only eight people are seated and they only have two seatings (5:30 & 8:00) a day.
The ingredients are sourced daily from Japan. The connections the Chef has are phenomenal for the ingredients. The ~20 course experience is an unending string of amazing taste explosions in your mouth and brain.
I am 53 years old, traveled all over the world, experienced all kinds of cultures and foods… This was the most memorable culinary experience of my life. No hyperbole!

One of the best sushi experiences I've enjoyed and I felt it stands up to some of the top omakases in Japan that I've been to. The ingredients, preparations and flavors were all top notch and every course was consistently great! The space and service were equally top notch with chef Ju sharing with us his journey as a chef and telling us more about each dish.

Chef served:
- chawanmushi with bafun uni
- kue sashimi
- Aji mixed with ground sesame seeds + other ingredients
- Saba roll with chives and ginger
- Hokkaido scallop tempura
- kinmedai
- sanma (Pacific saury)
- akami
- otoro
- somen with amaebi
- kuruma ebi
- Miso soup
- aka uni handroll
- anago
- unagi and corn rice (by itself, then as a chazuke for seconds)
- tamagoyaki (very creamy and made with shrimp heads)
- Japanese musk melon

In total I had 18 courses, though this I felt was a bit on the low end and it probably depends on what the chef can get his hands on, I do hope he's able to keep the menu at around 20 courses otherwise the value proposition is harder to justify even though this is by far the best sushi I've had in North America. (Fwiw everyone was full even before the end and chef did offer us more, to which we politely declined)

I'm excited to return and I want to see what chef Ju will do with ingredients from another season!

We had an unforgettable dinner at Sushi Hyun Omakase.

With friends visiting from abroad, we wanted to show them the best of Vancouver’s sushi scene. After much searching, we chose Sushi Hyun Omakase—not because it looked flashy, but because it seemed authentic, heartfelt, and true to its craft.

Our choice couldn’t have been better. Chef Hyun and his team exceeded every expectation.

The food is outstanding, with a menu shaped by seasonal ingredients and the finest seafood sourced from both Japan and BC. Every detail is cared for—the atmosphere, the furniture, the tableware, the service, the way each ingredient is handled, and of course, every dish that arrives at the counter.

What truly sets the experience apart, though, is the kindness and humility of Chef Hyun and his team. They made us feel at ease, sharing their knowledge and passion in a way that felt genuine and welcoming.

One of my favorite moments came at the very end, when Chef Hyun asked for our feedback and whether we had any suggestions for them. That openness and humility are what make Sushi Hyun truly special.

We look forward to returning soon, to discover new dishes and hear more stories from Chef Hyun and his team—including their upcoming annual trip to Japan.
