California Caviar Company Pioneers a New Era of Caviar Production

The journey began in 2011 when the global caviar trade faced a crisis. Overfishing had pushed sturgeon, the ancient species from which caviar is harvested, to the brink of extinction. A ban on international trade was imposed to protect these magnificent creatures.

Deborah Keane, the founder of CCC, saw this as an opportunity. She had already been pioneering commercial sturgeon farming and was determined to take it a step further.
Traditionally, caviar production involves sacrificing the sturgeon to extract the eggs. However, CCC has adopted a groundbreaking method known as the Kohler Process, which allows the gentle harvesting of caviar without harming the fish.

By using a combination of belly massage and a specialized tube, the caviar is extracted while the sturgeon remains unharmed and in the water. This process takes only a few minutes and ensures the fish's well-being.
Sustainability is at the core of CCC's operations. They use a closed-loop water system that minimizes environmental impact and ensures a healthy habitat for their sturgeon. They’ve also partnered with local businesses to create a sustainable food chain, reducing the ecological footprint even more.
