Einstein Bros. Bagels Plans 100-Plus Locations with New Store Design

Einstein Bros. Bagels is launching its most aggressive growth strategy in years. The fast-casual chain is rolling out a new store design called "Elevate the Morning" while simultaneously opening more than 100 locations through 2026.

 

The prototype aims to transform Einstein locations into what the company calls a "premium fast-casual breakfast spot." Enhanced in-store dining will be paired with streamlined online ordering - a combo that's becoming essential in today's convenience-driven market.

Cincinnati will serve as the testing ground. The Ohio city is getting one remodeled Einstein location, plus five converted Bruegger's Bagels - Einstein's sister brand - all featuring the fresh design. A sixth Bruegger's there will close next year.

 

This isn't a wholesale rebrand, though. "The brand remains an important part of our family of brands," the company said in an email. "While some locations are being converted to Einstein Bros. Bagels, Bruegger's will continue operating in select markets where it has strong community roots."

 

The expansion extends well beyond Cincinnati. Einstein has locked down seven new leases totaling 14,000 square feet across the Houston area, including spots in Tanglewood, Cinco Ranch, League City, Conroe, Humble, Tomball, and Garden Oaks/Oak Forest. Each store averages about 2,000 square feet.

"It's a privilege to support Einstein Bros. Bagels as the brand focuses on growing their presence across the greater Houston market," said Lunden McGill of Baker Katz, the real estate firm that secured the leases. "We're confident that securing these new leases will help Einstein Bros. Bagels continue to thrive, offering guests a warm, inviting atmosphere to enjoy delicious bagels, sandwiches and beverages."

 

Einstein plans to open more than 50 units in 2025 alone, targeting new markets including Ohio, Utah, Georgia, and Nevada.

 

Part of Panera Brands - which also owns Panera Bread and Caribou Coffee - Einstein Bros. now operates more than 700 locations nationwide. Last year, the chain posted $649 million in sales, up more than 11% year-over-year.
