Ingredients:
3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice

Dried Tropical Fruits 200g (1 cup)
(Banana chips, Mango, Coconut, Papaya)
Red and Green glazed Cherries 100g (½ cup)
3 Eggs
Sugar 150g (¾ cup)
Melted Butter 150g (⅔ cup)
Plain Flour 180g (1 cup, 4 tablespoons)
Baking powder 1 teaspoon
Vanilla extract 1 teaspoon
White Rum 2-3 tablespoons
Coconut Milk 45 ml (3 tablespoons)
Measuring cup size - 240ml
Baking pan 21x11x6 cm

Squeeze The Juice
2 Tbsp Cranberry
2 Tbsp Apricot
2 Tbsp Black Raisin
2 Tbsp Red Cherry

1/3 Cup Tutti Frutti
Soak For 30 Min.

Mix Well
5 Inch Oil Greased Mould With Baking Paper
Pour The Batter
Soaked Remaing Dry Fruits
Place a Pan With Wire Stand
Pre Heat For 5-7 Min.
Place the Mould
Cook For 40-45 Min.

Ingredients:
Dried fruit (e.g., cherries, apricots, dates, raisins, cranberries, ginger)
Sparkling water or preferred soaking liquid (e.g., fruit juice, rum, brandy)
Almond flourGluten-free all-purpose flour with xanthan gumCoconut sugar (or brown/white sugar)Ground flaxseedMixed spice (or a blend like pumpkin pie spice)Ground cinnamon and nutmeg

Process:
Soak dried fruit overnight
Mix dry ingredients in one bowl and wet ingredients in another
Combine wet and dry ingredients to form a smooth batter
Fold in soaked fruit
Pour batter into a greased pan and bake at 300°F for 1 hour and 20 minutes

No-Bake Fruit Cake

Ingredients:
1 box graham crackers plus 5 more crackers
4 cups chopped toasted pecans (toast pecans at 350°F for 8 minutes)
15 oz box of golden raisins
10 oz package of miniature marshmallows
2 sticks butter (1 cup)
12 oz jar maraschino cherries
Process:
Drain and chop cherries - reserve juice. Crush crackers, then place in a mixing bowl with reserved
juice.
In a saucepan, melt butter then add marshmallows
and cook on medium heat, stirring constantly until marshmallows and butter have melted together.
Pour mixture into the mixing bowl with crackers and cherry juice. Add pecans, raisins and chopped
cherries, mix well.
Use two large pieces of parchment paper and roll
mixture into 2 logs, then place into the refrigerator for 4 hours to chill. Take out bars, unwrap and slice into
serving pieces. Bars can be wrapped in foil and kept in the refrigerator for up to one month.
