Vampire Cupcakes

Cupcakes:
1 3/4 cups cake flour (see Cook's Note)
1 cup granulated sugar
1/4 cup Dutch process cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon fine salt
1/2 cup buttermilk
1/2 cup vegetable oil
1/2 cup sour cream
1 tablespoon red food coloring, plus a drop for the filling
2 teaspoons cider vinegar
1 teaspoon pure vanilla extract
1 large egg, at room temperature
One 3-ounce semisweet chocolate bar
1 teaspoon coconut oil
1 cup raspberry jam

Cream Cheese Frosting:
One 8-ounce package cream cheese, at room temperature
6 tablespoons unsalted butter, cubed, at room temperature
1 cup confectioners' sugar
1/2 teaspoon pure vanilla extract

Instructions:
1) Prepare the Cupcakes: Preheat your oven to 350°F and line a 12-cup muffin tin with paper liners.
2) Mix Dry Ingredients: In a large bowl, sift together the cake flour, granulated sugar, cocoa powder, baking soda, and salt.
3) Mix Wet Ingredients: In a separate bowl, whisk the buttermilk, vegetable oil, sour cream, red food coloring, vinegar, vanilla extract, and egg until smooth and well-combined.

9) Make the Frosting: In a large bowl, beat the cream cheese with an electric mixer on medium speed until it becomes smooth and fluffy (around 2 minutes). Gradually add the butter, continuing to mix until smooth. Beat in the confectioners’ sugar and vanilla extract until the frosting is light and fluffy, approximately 1 minute.
10) Frost the Cupcakes: Pipe the cream cheese frosting over each cupcake, covering the jam center.
11) Add the "Vampire Bites": Using the end of a plastic straw, poke two small holes into the frosting of each cupcake to resemble vampire bites. Ensure the holes reach the cupcake but avoid hitting the jam center. Drizzle a bit of the remaining jam into the holes to mimic blood for a fun, spooky effect.

1) Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by lining it with parchment paper. Lightly grease the parchment with cooking spray. Follow the instructions on the brownie mix package to prepare the batter. Pour the mixture into the lined dish and bake for 28 to 30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow the brownies to cool completely. 2) In a small mixing bowl, combine white chocolate chips with vegetable oil and a few drops of green food coloring. Heat the mixture in the microwave in 30-second bursts, stirring in between, until it’s fully melted and smooth. Once melted, transfer the chocolate to a small ziplock bag, snipping off one corner to create a piping bag.

6 oz. strawberry Jell-o mix (two small packets or 1 large one)
3/4 c. whipped cream-flavored vodka (like Pinnacle)

3 packages unflavored gelatin
3 c. boiling water
3/4 c. heavy cream
Crushed Oreos, for serving
