Oof, very disappointed in their noodles sadly. The beef noodle soup does not have a rich broth with slow-roasted beef - mostly a thin sweet herbal broth.
The tomato sauce in the wife’s noodles tastes like tomato paste, instead of fresh tomatoes (too sour, not fresh). And the ground beef sauce in the wife’s noodles tasted like a jiajiang mian instant noodle packet…
I recommend XiAn Biang Biang Noodles in Rosemead for a fresher and more flavorful version of this three-topping noodle.
Positives were the beef shank tenderness, and the smooth consistency of the wife’s noodles (but not taste).
This makes me think the Michelin star system rewards western metrics of food quality, instead of sticking to cultural food traditions - ie what actual Chinese people think about the food. Which would not surprise me at all that Michelin is a tool of western colonialism / appropriation

I had the opportunity to visit this Michelin-starred restaurant specializing in noodles, and I must say that the experience was overall very positive.
The house specialty, the beef noodles, were truly delicious. The meat was incredibly soft and rich, making it the highlight of the meal.
However, I felt that the broth that accompanied the noodles could have had a little more flavor. Although it was clear that a lot of care had gone into its preparation, it seemed a bit neutral to me.
Overall, I give it a rating of 8/10. Although it was not a perfect experience, the quality of the meat and the presentation of the dishes were more than enough to make up for the small deficiencies. I would definitely recommend this restaurant to any noodle and beef lover.

The knife-cut noodles at this restaurant are not Chinese knife-cut noodles, so don't be misled by the name. I waited 40 minutes, only receive the wrong dish, and they didn’t even give any apologize. Perhaps business is so good that they don’t have the time to care about small customers like us.

Shanxi noodle house. Noodles are chewy. Flavors are done well. Their best dish is the House Fried noodles, so fragrant. ?

The so called “ knife cut noodles” is not knife cut anymore. It supposed to be thick in the center and thin on the side to create that natural chewiness. Now They just use regular wide noodles. Linda disappointed, fake advertising. Also the dish is mainly noodles, very little meats and veggies. I don’t know if I wanna pay this much for noodles that barely has anything in there.
