If you enjoy sushi, sushi blue is worth the trip out to Blue Lake. This time, we had the Baja Roll and the Sasquatch Samurai and both delivered on the flavors. The Baja roll was the top roll for us on this trip, but the Samurai wasn't too far behind, I loved the slices of citrus on top of the Samurai that gave it an awesome hit of acid. We also had the chicken katsu and tempura vegetables, which also were very good.
Chef’s specials were super fab! Thanks for a great meal!
This place is so gooood! My server Krissy was so sweet and helpful. The specials menu was so delicious. Love this place!
Food was the star of the show.
Well this is my new favorite sushi restaurant in Humboldt. Many amazing vegetarian rolls. Other restaurants in Humboldt offer a tempura yam roll or avocado roll (which I’m grateful for) but Sushi Blue’s chef takes creative liberties and makes such amazing vegan vegetarian flavor masterpieces that you would find in a vegan restaurant in Chicago. Quality of the food is incredible. The chef also makes vegan deserts on occasion like a cashew milk yuzu ice cream. Yum!

Walked in and waited to be seated. Host stated that they were busy and no tables were available although we could see 5 tables open. He said the bar was full but it wasn't. Very weird vibes and mixed messages. Will not return.

A surprising gem: fresh fish, fusion flavors of Cali-Mex, Korean gochijing, eg Japanese buffalo wings; a California roll surrounded by smoked salmon with a hint of Jalapeno. Yum.

I highly recommend stopping by Sushi Blue if you are in the area! I am vegetarian and there are lots of really great options, and the head chef Pangnou is incredibly accommodating of dietary needs!! The beet poke bowl is unreal ? I do not live close, but if I did I would be going on the weekly ?

Sushi Blue is a relatively new restaurant located inside the Blue Lake Casino. The staff makes a fantastic effort in accommodating vegan diners. Wait staff are knowledgeable about how to make a menu item vegan. There are vegan options on the menu as well as a special menu every Wednesday. The Wednesday menu includes many unique vegetarian items, most of which can be made vegan. It was Wednesday, April 17th, 2024 when I dined here. I had the grilled artichoke with soy aioli followed by the veggie-tastic roll, both off the special Wednesday menu. Both were delicious!

The food was amazing really creative sushi rolls and fresh fish. Good selection of sakes. Some kitchen entrees for anyone who is not into seafood. Waitress was lovely always checking on us and willing to take more orders as we progressed with our rolls. Lovely

What I know about sushi blue is that their new head chef PN Vang is extremely talented. The way she prepares her dishes and the combinations she comes up with are outstanding. Absolutely delicious food and definitely worth a visit.
Always a great experience with great service and really creative, fresh and delicious food. I follow chef Pangnou Vang on Instagram and you get to see her specials. She used to work at Kyoto and I loved eating there! The restaurant is also kid friendly, and they can really work with gluten-free options.I wish the sushi bar was not low and it had stools so you could be much more interactive with watching them make all this creative food. The restaurant being located in the smoking section is not on the plus list, for sure. Also, Ramen! They serve it Friday and Saturday nights and it’s absolutely delicious! I know the chef uses locally sourced pork bones for her broth.I added a bunch of pictures. The last one is of their Ramen.
Vegetarian options: If there is not a vegetarian roll for you on the menu, I am sure the chefs can easily create you one
Dietary restrictions: Gluten-free and vegetarian options are available. Also, vegan/dairy free
Parking: They even have free valet
Kid-friendliness: Ask for crayons and sea creatures to color

Sushi Blue is always a great eating out experience. They are kid friendly and allergy friendly. I love their specials! They range from heirloom tomato sashimi to Ramen to chicken Katsu to Yakisoba noodles. It’s always a creative and fun dining experience. Unfortunately, the casino has located them in the smoking section. Hopefully they will put in a great filtration system soon. And I do wish the sushi bar was higher. The new restaurant is much bigger. So typically there is not much of a wait, although I always make reservations. Chef Pangnou Vang used to work at Kyoto for a decade so I know she’ll make me fantastic rolls. If I’m not feeling saucy for the night, I always ask them to put it on the side. If you haven’t been to the new location, give it a try! The waitstaff is awesome and if you ever have any issues, let them know! A lot of restaurants in this community want to know how they can do better.
A hidden gem and so worth the trip to this sushi restaurant. My husband and I arrived when they opened (1700) as the place is small and can fill up quickly. We decided to try the Omokase Experience - where the sushi chef prepares what he wants to serve that evening. OMG! We were treated to four servings: 2 sashimi and two roll type offerings - each brought out individually one after the other. It was nothing we would have ordered and we so enjoyed the different tastes and combinations our chef put together. Thank you for allowing us to experience your skills as a sushi chef. I didn't even use the wasabi soy sauce combo I usually enjoy at a sushi place. We were pleasantly full after the four offerings we stopped ordering though we wanted to continue. The four dishes, a small bottle of sake and a beer and it was the cheapest sushi bill I ever had.
Parking: Good parking at the casino.
