If you choose to try this place, you really need to read the descriptions carefully. Their HK sauce has egg in it. While it was very sweet inside, and seems like it has a lovely community who frequents it, their vegan choices are very much so dressed down versions of their offerings.

While the concept of this places menu looked interesting, the food was definitely lacking. 1 coffee, 1 oh, and 2 waffles, $50.
We come inside and were told to order outside window and come in. OK, fine. Did that, and there's a register inside taking orders. Wtf? Ok over it.
The food came out quickly.
The food itself? Now I'm not a foodie by any means, but I have sensitive taste buds. I can always taste all the ingredients. I think this place is trying to hard to be healthy in replace of the foods flavor. There's ways around it, but this food was very blan, no salt. No sweet.
I ordered off the sweet side of the waffles, husband off the savory.
The only sweet in my waffle was the banana. Even the syrup wasn't very sweet. The peanut butter was lacking any salt, which isn't very appetizing. Just made the waffle taste dry. Hubby had a egg and bacon waffle which was lacking so much flavor that he had to put hot sauce to cover up the weird blue corn waffle taste. They could have done so much with a little sugar and salt in it, give it a sweet corn bread flavor. While we will be back to cayocus, this place will definitely be a pass.

Do yourself a favor and eat here. A unique menu that you will want to try and replicate at home. I tried the "Morro Melt" breakfast dish, a 1/4 inch thick cut of turkey served on a 1 inch thick blue corn waffle topped with caramelized onion, Havardi cheese (I think) avocado, some type of greens (maybe arugula) and a few other ingredients - delicious!.

I also had one of their special coffees (can't remember the name), but it was similar to bullet-proof coffee with a twist - they added hemp seeds, cinnamon and dates for sweetness. That is a damn good cup of coffee.

The ordering process starts outside where you go to what looks like a take-out window. You place your order and then you are given a number plate. At that point you go inside and sit down. We got there 15 minutes before it opened and within a 1/2 hour the place was full

The motto of the restaurant is "From Earth to Belly" and they speak the truth

One of my absolute favorite breakfast spots in the world! My boyfriend and I love coming here to share a smoothie (they’re incredibly thick and delicious). Our top picks are the Bishop’s Buzz coffee smoothie and the Big Sur Blue. We also can’t get enough of the San Luis Sunrise waffle—topped with bacon, avocado, egg, and their signature HK sauce on a blue corn waffle. The atmosphere and vibes here are unbeatable, and the service is always top-notch. The line can get long on weekends around brunch time, but they move quickly, and it’s always worth the wait. Whenever I’m in the San Luis Obispo area, stopping here is a must!

It is a week later and I’m still thinking about their churro blue corn waffle with a fried banana. The laid back vibe, quick service and delicious food make it worth a visit, and likely you’ll become a frequent fan. They use their ingredients generously, the tacos include a ton of avocado, the smoothies are practically spilling over the cup and the waffle is stacked with their homemade toppings.

Everything is blue corn based - definitely not for me. Beautiful location, but all self-service kinda like Carls Jr. You pour your own coffee and water, and you bus your own table.

Very cool beach vibe breakfast/ brunch spot with ocean views, featuring their signature homemade, farm to table blue corn waffles and tacos. The waffles are available sweet or savory and are to die for. Definitely unique and a special treat. My visit breakfast spot when in Cayucos.
