Rustichella d'Abruzzo Sagne a Pezzi
Sagne a Pezzi, meaning "broken lasagne in pieces," is made in a similar fashion to Pizzichi, using a thin, curled lasagna die, then cut into squares about 1 inch in length. PrimoGrano has a soft, supple texture and the shape is quite amusing on the palate. Second time at chi SPACCA. Both were very rewarding. First time, sat at the counter and watched these amazing chefs work. Each station doing their job to the letter. Bone marrow pie, grilled octopus, and steaks were the standouts then. This time deliberately picked other menu standouts. Grilled squid and pork loin new additions were fantastic. Both flavor profiles, first with peppers and second with sage and fennel, were next level good and worth every penny. Staff is very attentive...

Everything was amazing except there's a newer cook on the counter that I requested from him aioli and you can see he intentionally wanted to ignore me because he's “too good” to accommodate request from a client so I never received it although I waited to start eating my burger until I'm getting it. I didn't harm your rating but you should talk to him as it harms your business
