It is, fresh yam and can of hominy, cut small, add water and oil, drain, season, fry in oil.

I highly recomend Tacos Mi Ranchitos. I have been ordering the quesadillas and tacos once a week now for the last few months! This truck is my new favorite and they are affordably priced! The staff is so friendly and accomodating.

i would recommend these 10/10 the food is always on point they're always conscious about not messing up our orders due to allergies and they keep their salsa bar and everything else fresh and clean

Tried several Taco Trucks around Visalia and have to say, their food isn't swimming or saturated in that orange greasey oil like most others. They don't charge extra for their salsa, especially since it's self serve. Really nice son and pop joint. Fan favorite of their green avocado salsa mixed with their regular green salsa.
