A couple of months ago, I found myself in Palm Springs proper with a few colleagues, looking for a decent place to have a nice meal. Our foursome found Cork Tree, and took a brisk evening walk over from the condo.The ambiance was nice-- unnecessarily dim for four educator-types with an allowance account-- but mellow after a long day at a conference. The place was pretty packed; still, we we able to get a table without any delay.Our server was, in a word, amazing. Very knowledgeable about the menu, patient, and just the right blend of wit and wisdom. Like Red describing Tommy in The Shawshank Redemption: "We liked him immediately."We started with a couple of wedge salads and a couple of soups. I'm one of those babies who likes to have his wedge all chopped up and tossed, and they did that here perfectly. A very well-balanced salad, not too watery, and kick-ass bacon (it's a culinary term, look it up.)For the main course, we ordered the following around the table:- SPICY CALABRESE SEAFOOD LINGUINI(Rock Shrimp, Baby Clams, Calabrese Salumi, Shaved Garlic,Marjoram, Parmesan Cheese)- BEEF FILET MIGNON(Horseradish Crust, Roasted Beets, Broccolini,Fingerling Potatoes, Red Wine Sauce)- BRAISED PORK SHANK(Tomato Bacon Onion Compote, Polenta,Blue Lake Beans, Pork Jus)a couple of sides.......and I got:- ROASTED ICELANDIC SALMON(Sweet Corn & Lump Crab Chowder, Smoked Trout Caviar, Lemon Oil)Everything was plated well, and my compatriots enjoyed their meals. As for me, salmon is one of the only seafood entrees I purchase (as opposed to catching my own seafood locally). This one was well-conceived; the chowder dressing added to the natural moisture of the fish which was cooked just on the downside of done (how I order it and how I like it)... but unfortunately, it was a little fishy. I know, imagine that-- fishy salmon in the desert.I ate the whole thing, and we're not talking, like, Marie Callendar's "Fresh Alaskan Halibut" fishy (OK, that's just cruel)... but it wasn't up to snuff. Just sniff.Overall, I'd definitely give this place another shot, and likely will on our next trip to the area. I'll probably stick to the turf side of the a la carte menu on my next visit.

Cork Tree menu and recommendations from friends was an enticement to try. Escargot was well prepared, Scallops and Pork Shank recommended. Must try the special deserts.

We went based on the reviews and were not disappointed. We began with the short ribs and escargot appetizer and it was good to the last drop. We also had the scallops, which were seared to perfection, and the featured trout special-both of which included complimentary accompanying sides. We also opted for dessert but the sorbet/gelato combo was a tad bit disappointing. I would definitely recommend this restaurant.

Consistantly good. Fine dining in a classic atmosphere. The wait staff has service perfected and the chef's have the touch. Some favorite dishes, Soup Trio has been eliminated, but enough regular customers has missed it so it should return.

Not as good as it used to be. Busy. Slow service. Steak way overdone! Wedge salad swimming in dressing! Entree not hot.

First time here but will be back. Outstanding service and no split charges! Wife and I split steak which was cooked to perfection! Waiter was gracious. Pricey but worth the experience!

We had a very enjoyable evening meal here. We chose to eat outside and it was a good decision. I had the salmon and my wife had scallops. Good place for a relaxing meal.

There is not much to say other than the food was overpriced low quality inedible and maybe some of you can understand that the sides were sitting around and placed next to a $60.00 steak that you needed a chainsaw to cut it. Would not recommend this place to anyone. When I told one of the four people serving my food how terrible it was he took it away and charged me for it. I was with other people and didn't make a fuss but if I was out with just my wife I would have given it back. Don't waste your money.

It is fine dining. Service and food are superb. Of course, you are going to pay for such high levels. But when you want "nice" this is the place to go.

Great local restaurant for us living in the neighborhood! Quality food but small portions. We enjoy the quiet ambience and option of eating inside or out! Servers are friendly and staff accommodating. We eat there often and have never been disappointed! A must try! Beverly Benjamin

I have been meaning try this place and when two friends were in town we gave it a go - we were not disappointed in the least. Two of us had the salmon, while another had the filet mignon. All were delicious, and well prepared. Octopus was our appetizer along with starter salads. From start to finish it was a delight - would definitely recommend for the food, the atmosphere and attentive servers. Well done Cork Tree!

Excellent new American/California cuisine! Interesting twists on familiar dishes. For example, the addition of pomegranate seeds to the scallops introduced a whole other delicious element to the dish. The pork shank was delicious and the steaks cooked perfectly. One minor quibble was my scallop was over salted, but it still had a nice crust and I enjoyed it. Certainly worth a stop by if in the area.

Bar only Happy hour starts at 4. All nite. No tap beer but decent selection.Good choice of wines. We split the large caesar salad. It was excellent with anchovies. Gf had crab cakes (2)Tasty but fairly small ($15) I had short ribs with escargot. Portions are small but very tasty. We would go back..
