We were seated right away but were forgotten immediately. There was an apparent lack of communication between staff who did not know we had just been given a table. This gave us time to look over the menu but we had to call for someone, who was as surprised as we were by the issue. Problem solved. We had a burger and fries and a pulled pork pizza. The burger was good and seasoned well but the brioche bun is not the correct bread for a juicy burger. The bottom part disintegrated less than half way through. There is no way you can eat it without a fork and a knife. The pizza had very little pork, with very little taste. The issue was with the fair amount of whole cloves of garlic that were al dente and overtook the entire dish. Prices are high and all the fancy dish names need to deliver in preparation and most importantly taste, which it did not, unfortunately. The manager gave us a break on the bill for the initial issue, which is a sign that they care about the service. Now they need to work on the kitchen side.

We went to breakfast here each morning. Nice place to eat and the food was good would recommend. Just grab a coffee in the lobby and bring it in because a black coffee is 8 dollars

I got food poisoning. It was horrible.

We stayed at the Allegretto and had dinner at Cello Ristorante on Wednesday, March 19th. My husband and I sat at the bar, where we were served by Jose and a wonderful female bartender whose name, unfortunately, I didn’t catch. Both were outstanding—friendly, professional, and incredibly knowledgeable. Their exceptional service truly elevated our dining experience.

The food was absolutely delicious, and the ambiance of the restaurant is stunning. It’s always a pleasure when great food is matched by outstanding service. I sincerely hope Douglas Ayres sees this review and recognizes the fantastic job Jose and his colleague are doing. They are a true asset to Cello Ristorante, and we look forward to returning!

I absolutely loved this hotel, but the restaurant needs some improvement. The food was a tad strange, and not the Italian fare I’m accustomed to when I visit the Mediterranean. It’s also extremely overpriced…one morning for breakfast we shared a platter and ordered two mimosas. Our bill after tip was $95. Ouch!

We were all very disappointed in this restaurant. I am not usually one who tries to send food back, but on this occasion, I did try. The calamari was literally burnt and didn't even look like calamari. My husband is son-in-law were embarrassed and wouldn't let me return it haha.
Everything was just underwhelming. It had no seasoning it seemed. I had the chicken piccata and I didn't even eat half of it it!! didn't even taste like Piccata, I don't know how to explain it. However,
the kids hamburger was actually good, and the burrata toast was also good. My son-in-law had salmon, I don't remember what my husband had, but he was not impressed and their Caesar salads were just okay. We just expected way higher quality in a resort setting such as the Allegretto, which if you read my review on that, I was not impressed with the hotel either. I rarely leave negative reviews, you could look through my whole page and see that it isn't something I usually do. But, when things cost this much, I just expect them to be better, so just a warning people who expect the same from this place.

This review has been edited from the original. I removed all of the details of my experience, and added a star because of the efforts of the food and beverage team at Cello/Allegretto. I will say that they were very attentive to my criticisms and I am hopeful that they can make adjustments so that others will have a better experience.

My husband and I stayed a few nights here and were able to get a table without reservation. The staff at the hotel and restaurant were top notch. We both thought that the bread was delicious. The 2019 Cabernet Sauvignon from Willow Creek was great. My husband thought the Funghi pizza was strange but I liked it. Later we came back to visit the bar. Shalyla and Jacob were friendly and took great care of us. Fantastic service from all.

I have been coming to Allegretto for several years and always enjoyed a wonderful Belgian waffles breakfast. This year I was staying elsewhere in Paso Robles with my friends and decided to treat them with a breakfast in Cielo. One of my friends is allergic to garlic and he ordered chicken waffles. I specifically asked the server whether the meal contained garlic and she replied “ha ha, of course not”. As soon as my friend took the first bite, he tasted garlic and we flagged another server to double check with the kitchen. Within a couple of minutes, our server came back running and apologizing and told us she won’t charge us for the meal! Luckily, my friend isn’t severely allergic and only had mild stomach problems for the rest of the day after taking the medications. Please educate your servers on allergies! This could have been a deadly mistake had his allergy been more severe.

Stayed on property, seemed like a nice restaurant, we gave it a try. Food was very disappointing from mushroom appetizer to pizza. Very blend, tasted like cafeteria food. Salmon and Halibut were overcooked, pasta and vegetables were good. Apparently restaurant has been going thru different chefs. Service was good. We sat at bar after, I do recommend getting a drink at the bar. Manager did take 50% off the bill for disappointing quality

My wife and I were looking forward to having dinner at Cello, we had a reservation and arrived early. The hostess told us our table wasn’t ready and to “move out of the way” while we wait. I watched what looked like to be our table be cleaned and prepped. I thought about asking the hostess if that was our table but gave her the benefit of doubt. I waited about 20minutes (while watching the hostess play on her phone) then finally asked the hostess if our table was ready, she guided us to the empty table I watched for the past 20minutes. When we finally sat down we chatted with the couple seated next to us, they told us they had been waiting over an hour for appetizers. We decided not to risk any else and left. That couple helping us make the decision to leave was the most positive aspect of the entire experience.

Excellent Caesar salad - maybe the best I've ever had. Dinner service can be a bit slow so reservation times are critical.
