I was pleasantly surprised to find Japanese soul food prepared with love and authenticity today. Their signature ramen broth is carefully made over 72 hours with high quality locally sourced ingredients including tons of pork bones. The agedashi tofu and chicken karage are lightly dusted in mochiko flour - no wheat flour. This provided a light crunch with the thinnest layer of a crisp batter. This level of culinary witchcraft is so hard to find! I will definitely be stopping...
The ramen was really exceptionally delicious in my opinion. It was definitely some of the best ramen I’ve ever had. I had the signature momotaro ramen, which was tonkotsu ramen with pork belly that was super tender and broth that was really rich and flavorful. I had low expectations considering that it is located in a food court in the very white and conservative town of Paso Robles.
