Silva Brewing is a small local brewery with good beer. They have indoor and outdoor seating, and you can bring your own food. The hours of operation can be a bit confusing, but once inside, the taproom impresses with a variety of tap handles and merchandise available for purchase. The West Coast IPA offered, such as Laughing Pecker and Hop Maniac, are crisp, hoppy, and well-balanced, showcasing various hops beautifully. The staff, like Chuck, are knowledgeable and personable, making the experience enjoyable. While the location may be a bit tricky to find, the quality of beer and welcoming atmosphere make it worth a visit when in Paso Robles.
