Changan Kitchen is an authentic hand pulled Chinese noodles restaurant and an oasis in the desert. The restaurant is spacious and clean inside with many seats. The staff is friendly, kind, helpful, and welcoming. The big menu includes slow braised beef noodle soup, minced pork noodles, Biang Biang noodles, wide noodles, pan-fried buns, skewers, a fried vegetable mix, shrimp fried rice, dumplings, and wontons. The hand pulled noodles are incredibly delicious, chewy, and have the perfect chew. Flavors are addicting and hit hard. The beef noodle soup is delicious and not too spicy, with tender beef and plenty of soup, though some note not much meat and vegetables. The pan-fried buns are a must-try with thin skin, generous filling, and a perfectly crispy bottom. Everything is fresh and tasty. It is a gem and definitely worth a try.
