Food is delicious and fragrant. Chili oil is authentic and actually has spice and taste, not that mild stuff other places have. The beef in the fried noodle dish is tender and delicious, the sauce is fragrant. Cats ear noodle did take a longer time to make, but it's all hand made. Can't complain.

My husband got the lamb organ soup and the broth is milky white. The soup is extremely clear tasting and not gamey. Hand pulled noodle texture is on point. Not too soft, chewy.

Speciality fried pork was great and had that authentic north west vinegar sauce and taste.

There was a super annoying customer last night and the staff handled the situation very well. My husband was annoyed for the staff. Props to the restaurant. 10/10.

If you're dining in for the first time:
-Staff does not speak English, do some research on Xian cuisine and checkout their menu beforehand so you understand what dishes to expect
-They accept cash
-Water is self service
-Staff is not intentionally being rude, there's a cultural difference between Chinese and western dining service
-They don't bring utensils out because they're already at your table
-If you have any type of food allergies or dietary restrictions it's up to YOU to figure it out and not the staff

My wife & I comes here once or twice a month sometimes every week specially during cold days and always order the same Beef noodle soup ‘knife cut’. Beef chunks that are so tender and juicy with broth to die for!!! We come in and most of the times we do not even need to tell them our orders because they know us already. We‘ve been coming here since they changed name from noodle boy. the ‘lady’ sometimes gives us other food or appetizers to try. what a great service !!! We are coming back for more. thank you!!!

If you can't make it back to Shanxi, China, this is the next closest thing in SGV!

I had been craving handmade noodles all week, so I came in here today for lunch and ordered the knife cut noodles mixed with tomato sauce and cucumbers.

They also had black fungus, which filled me up quickly. You can grab a plate, then load it up with veggies at the buffet bar.

I decided to be a pig and get the beef dumplings as well, since I was fasting.

I really appreciated the handmade dishes.

Would come back and try other stuff!

Noodle Palace is a small Chinese restaurant in Rosemead, CA. They specialize in Shanxi cuisine.
I had lunch there on a Wednesday. One waitress ran back and forth between the dining area and the kitchen. She had a nice smile. I could see the action in the kitchen through a wide opening. I saw a little machine in action, doing Knife Cut Noodle. It was interesting. Their menu was simple. They had 8 different noodle bases: hand-pulling long, sheer-cut, cat-ear, knife-cut, hand-pull small piece, and the 2 others in Chinese. I ordered the hand-pulling long noodle. I was told that the whole bowl of noodle had only 1 long string of noodle. I tried to pull it up but could not find its end. I believed them. The noodle texture was amazingly firm and chewy. The Chinese Beef Hamburger and dumplings were good. I thought I knew Chinese food. I learned a new dish: 莜麵栲栳栳. I would translate it as Oat Basket Noodle. It had an interesting texture. However, trying it once is enough. I would not order it again. Overall, I will come back to try other dishes.
