Was here in San Diego with my parents on vacation and were told the wait was a 1/2 hour to 45 mins (came in to put down a reservation right when they opened) and didn’t mind waiting because of the good things we heard. On the reservation site it showed we were next up to get in after an hour and a half of waiting. We were never called— even after 3+ hours. Pretty unfortunate.

Not sure if it was because we had a party of 4 but just a bit ridiculous to keep people waiting— probably best not to get your hopes up of getting in if your party is of 3 or more.

Loved the intimate experience in their small hidden rooms. Personal drinks service to your taste. We loved our personal drinks. Good place for a date, small groups 3-4 at the most. We only waited 10 min. It was my first experience but not new to someone in my group. Definitely recommend this place.

It was a long hard day yesterday, and thought a drink would cheer me up, so I came to Noble Experiment by myself. Had a 30 mins waitlist. Sierra was my bartender who left me feel completely unwanted there. She didn’t want to hear what I want, left me with one drink and went to the other side of the bar and never came back. I am not sure Sierra why you hated my presence so much…Was it a bad day for you too or I am being only dark skin colored among the pool of white crowd made me an inferior customer? I would see you entertain other white customers gleefully and then look at my side as if I am invisible. You never came back to ask if I need another drink. I would look at you multiple time and you will see me but turn your head around. If I would have gotten the fraction of attention you are giving to those white ladies (who didn’t even need anything), I would call it a win.

Eventually I had to ask the other guy bartender to give me the check. The drink you made was good, but your treatment to me wasn’t. Next time, may be treat a POC immigrant who gathered enough courage to go out by themselves after a shitty day little better with visibly less racial bias?

Shoutout to the guy bartender for being nice! No tips for you though!

Reservation is recommended, but they can also put you on a wait-list for walk-ins. Probably half another to an hour wait. The entrance is behind the beer barrels.

It's a small intimate bar. Not super crowded, not loud. Perfect for a conversation. They don't have a menu, but they will make you a drink based on your palate.

Very interesting and great bar. The bartender talks to the customer about his tastes and then makes a cocktail at his discretion, there is no menu. The cocktails they offered us were very good.

Great location to hang out and chat. Suitable for a date or to just hang out with friends. The bar itself is really cool and has a great style / appeal. The cocktails were good and the service great, I am deducting one star as I hoped the cocktails would be a bit more creative given the questions we were asked while ordering. They don’t really have a menu but create something in line with what you like.

We went to the Noble experiment for an experience. The waiter asked about our drink preferences, however he seemed uninterested in serving us. It felt rushed and there was no engagement with our party whatsoever. He's brought us our drinks and did not bother to ask if we liked it, nor did he check on us after serving us. I would not recommend this place. I've had better experience at regular bars.

The drink I received was a glass full ice with a tiny strawberry. It was also weak and I was unable to taste the alcohol. The waiter did not explain how our drinks were made. I should also add tonight was "Dealers Choice" night.

Cool bar, but wasn’t expecting to pay $18 for a mocktail. Visited with friends, and they charged us the same amount for the one mocktail that I had as they did for everyone else’s alcoholic beverages. Doesn’t seem fair to me. Other than that, we had a great time.

Went here for a couple cocktails before a concert! We made a reservation for 6pm and nobody was in there but by 7pm it was full! The bartender crafted each of our cocktails individually to our likes/dislikes. There's no menu to choose from but each drink he made was right on point! There's no food but there's a restaurant connected to the speakeasy if you want to eat before or after your drinks. Love this spot and will be back next time we're in San Diego!

Bespoke cocktails from talented mixologists. Great service! Music was a bit loud for me. NE does not serve food, but the "front" institution does if you arrive early enough to eat there.

Maybe I went in here with the wrong expectations but I wasn't impressed with the bartender. I gave her my preferred types of spirits and tastes then asked for her to offer other spirits that I may not have thought about. Nope. Instead, it was, "You tell us what you want and we'll mix something." How about when I say that I'm curious about Campari but have never had it so maybe my bartender could offer something? Nope.
The scene is interesting (compare its September 2024 look to photos from earlier this year and they're quite different) and the pours were generous but what I got could have been done by a good bartender in any of SD's other establishments.
P.S. No food is allowed nor served.
