Newly opened modern fusion pho place with a Western twist. It's right off SJSU campus, conveniently located. Tried the transitional pho, it was decent. Soup was on the saltier side. The service was great, very attentive. You can order via a kiosk, quick and easy?. We hope they will do well especially in the hard time for many small businesses. Give this place a try yourself ?????.
Food is great if you get lucky enough that they don’t randomly close or run out. 3x in a row drove down from San Mateo only to be told they’re closed or ran out. Even after calling before to check!

Cowboy Pho is a nice fusion representing the mix of Vietnamese cuisine that San Jose is known for combined with the Barbeque of Texas
The store front is by the busy San Jose State campus and is a popular quick meal for students. Limited street parking is available.
While traditional pho is available, I didn’t venture to this side of town for common Vietnamese eats
The choice to make are the smoked meats including smoked brisket, smoked Beef Rib or smoked barbecue chicken
Ordering is done via a kiosk and open seating is all indoors. Staff do bring your order to you
My order was ready in minutes and it is a hearty meal. The pho broth is a touch sweet but the star is the well-seasoned beef rib with tender meat easily enough for two. A nice smoke ring is visible and flavors are solid
The rib cubes are boiled versions of bbq burnt ends and the filet mignon is standard thinly sliced meat. Overall, a nice spot for students and other downtown SJ visitors

Great idea, but poorly executed. Broth is super bland, and the ambience is kind of cheap. The Instagram videos make it look way better than it actually is.

Got a friend that went to this small tiny little soup kitchen right across the street from San Jose State University. They make some excellent Pho soups and Bahn Mi sandwiches. I decided to try the Pho soup and got the 3 kinds of beef and it was splendid. The bowl was a good size not to small and not too big. I also decided on some extra noodles and the soup hit the spot. They have those computerized menu tablets on the counter and you pick your stuff and pay the machine and wait for your food at the tables inside. The male employee Vin was excellent and professional with his style of service. Checked up on me more than once and made sure I had everything I needed to enjoy my visit. The place was small inside but well stocked with the small and tall tables and chairs. Made for all shapes and sizes of us customers. Including the physically challenged. The parking was a challenge but also available in the back of the building if not able to find any parking in the front street. I enjoyed my Pho and will have to return to try the bahn mi sandwiches. I enjoyed the oldies music playing on the speakers inside. That was some good stuff to listen to beside all that Rap or Hip Hop. It was a great visit.

Love the filet mignon and beef tendon/shank meat. Pho broth was good and a little different from other pho restaurants but on the salty side. Generous meat portion for the price. The Texas brisket meat was good and makes me want to have BBQ. I prefer the traditional pho meat with the pho vs Texas brisket. Nice, attentive staff.

Wow! Totally worth it! The pho and the BBQ are both totally amazing on their own. As a combination, they are out of this world. The owner Vinh is super nice, and you can tell he puts the TLC into making the food. Definitely going back.

Self proclaimed pho snob here, the pho here is the best I’ve had in the Northern California region. Great atmosphere and easy ordering thru a kiosk, pick up and seat yourself kind of place. There’s a different kiosk for the Banh Mi. Wish I had the appetite to try the banh mi but the pho filled me up. The broth is rich in flavor and the meats are all tasty and abundant. Parking in rear.

This place is the BOMB ? ? The broth and meats were delicious ? my favorite was the brisket and tendon. Best way is to choose the 3 choice meats and pick what you like. Fun ambiance with a great fancy Photo op royal chair and staff and owner so super nice and helpful with my request! Go before everyone discovers it and it gets too crowded!!

Use to be a great place to get buhn mi, the sandwiches have changed in portion and size. They don't offer my usual grilled bbq pork. The pho is good, beware that it is a bit salty and thick layer of skim.
Please bring back the grilled BBQ pork please, and portion sized. Might be time to find a new buhn mi place :(

I’m giving five stars mainly because the beef rib and brisket with pho were not only a unique dish to me, but also because they were pretty delicious.
The strut is shared with a bahn mi restaurant so don’t get them mixed up. Self order at the kiosk then find as seat. They call your name but then bring the food to you.
Imma say the beef rib was super good. Falls right off the bone and the outer PST with the seasoning is the bomb. Also came with yum brisket but not as yum as the rib. A little pricey at $40 but hey, go for it.
Also tried the (I think) filet mignon pho at a much more reasonable $17. The brother combo was way better.
Four parking spaces in the rear, others you gotta find it on the street. Service was really good. They were super nice.
