The aburasoba uses ramen that has a chewy texture. It’s a dry ramen (no soup) and you can chose from multiple types of toppings. Servings are very filling. This place can get packed.
There's always a line for this restaurant so be prepared to wait. Once seated service is relatively quick. Love the flavor of the noodle dishes. They're ramen noodles (not gluten-free) without the broth and you can mix different spices into your dish. I ordered the vegan and added a poached egg. However once the fried tofu gets cold, it becomes rubbery. Next time I'd like to try their rice dishes.
I was skeptical about the brothless ramen because the broth is my favorite part of ramen, but overall I really enjoyed it. It's pretty filling as well. A little pricey for what it is, but great atmosphere.
