Recently moved here and have been trying some of the local croissants... haven't been impressed until I tried Red Bird. Got an almond and a chocolate croissant. Two things really stood out, serious layers and exceptional fillings. The chocolate was not too sweet and the almond had a deep flavor. I loved these croissants.
Buttery melting decadant Croissants turned into massive sandwiches or savory street corn veggie squares. You can try something new every time and still be impressed. The passion for the crafting of baked goods is evident. This is a cafe meant for savoring not rushing. Meet a friend here or start a slow morning with a treat.
I now live on a small farm south of Dallas.This morning I opened the freezer and to my delight discovered a loaf of levain I had carried back from my last business trip to Santa Rosa. It's going to be a good day! It could only be better if there were a RedBird in Corsicana Texas!
