I have eaten cemitas in Puebla and after trying these cemitas I can say that they are authentic and have a great flavor. I tried the milanese cemita and it was delicious, the meat was soft and the bread was spongy.
The cemitas are very delicious, a lot of variety of ingredients, perhaps the only thing that is needed is to modernize the chairs, a better distribution would have better seating comfort and more space to sit.

Cemitas are like gourmet tortas that are tasty, toasty, chewy, cheesy, spicy, and big. Be aware that a small cemita is actually pretty big. I don't know what a large look like, though I saw a customer cutting their torta in half.
