Happened to be up in the area and my wife and I struggled to find a decent Mexican restaurant that wasn't overpriced in Vista.
They have a pretty good selection here, and everything is perfectly priced. Tacos range between $2-4 dollars, even outside of Taco Tuesday. Burritos are between $10 and $14 (The most expensive is the Surf and Turf, which is normal.)
We shared the Adobada Fries, she had a Carnitas Taco (not pictured) and I had an Adobada Burrito. The fries looked so good that we couldn't wait to take pictures. 😂 She said that it was some of the best carnitas she's ever had, and the adobada itself was great. The Burrito was a little underwhelming, which is disappointing.
Overall, great spot, great service. Only docked a star for portion size and the Burrito which was a bit soggy but still good.
Who puts beans on a fish burrito? Don Paco. Horchata is good.

There are changes in the food, the meat is no longer so good, it is always dry, the fish tacos taste sour, gorditas and tacos with such poor filling. And the cashiers… so bad service. :( We no longer visit it so daily. Too bad, because it used to be a great place.
