A very beautiful place! Food is so good and clean. The service is not the best, one server rushes you and is not nice to customers. She took our plates the literal second we looked like we were done. She did not think for a second that the fact that we wanted to sit a little and enjoy the food.

My favorite food is sushi. My BF is not (yet) a fan but I am working slowly to change that. I was excited to try Seabutter as it's local and saves me driving to Sugarfish or Kat-suya. The service was welcoming and exceptional in their service, and the restaurant very clean. The location has ample parking and a beautiful fountain out front as well. Unfortunately, the tempura shrimp and vegetables was modest in size of shrimp and in portion, and consisted mostly of squashes, and the tempura was raw inside. At 5pm yesterday, I ordered the yellowtail collar to start and then was told that they were out. I was generously offered the salmon collar in lieu. I happily accepted. It was also undercooked in parts and had several pin bones. The miso mushroom soup was tasty and had great potential with ample mushrooms, but the mushrooms themselves were less than al dente and the degree of rawness in the bite detracted from the soup quite a bit. The edamame were meant to be salted but were not. The crab handroll was a nice size and excellent, though I didn't care for the filler of cucumber in it; I prefer more crab. The miso glazed Chilean sea bass ordered by my BF was a nice size piece and could have been very good, but also just a bit undercooked and gooey on one whole side. It needed just another minute or maybe two of cook. The miso glaze was also overly sweet. We would also have sampled the chicken teriyaki as it is always a good option for a party member who doesn't love Japanese food, but it was prepared only with dark meat, so we didn't perceive the value for the cost. (Personally, I love dark meat, but it not what most people want). Chef very kindly agreed to exchange the shishito peppers with broccoli on the Chilean sea bass as my BF hates peppers. (I give five stars for this accommodation as this was my first time to get my BF to go for sushi with me and love it; chef was kind to make this accommodation). But the broccoli that was substituted was served in a separate dish with zero seasoning-not even salt-and not placed in the miso glaze as the peppers would have been. It was therefore watery and tasteless. The sake was good and the green tea as well. Overall, I will give a three star rating and hope that this was just an off evening; we can all have them...and there is potential here. I will go back and just order sushi and update my review at that time.

We had 7:00 reservations. It was pouring rain when we arrived, so they couldn't use the outside tables. That created quite a little crowd near the door, of people waiting for a table. We didn't need to stand there long, before they cleaned up our table and led us to it. Definitely make reservations. It's easy on their website. Irene was our server. She promptly brought our drinks and food orders, and was knowledgeable of the menu. If you like to watch the sushi chefs, this isn't the place for you. They're behind the counter with fresh fish in the cooler, between guests and them. It wasn't possible to see what they were doing. Plus, you order from the server even while at the bar. Our food came out lightening fast. Maybe too fast. It made me wonder how much of it is prepped in advance. There are innovative things on the menu; some unconventional flavor combinations and "pressed" sushi. It's as if they used molds to press the ingredients into, which eliminates the need for nori. We like nori so we didn't order any. We started with a round of miso soup. It was one click more flavorful than what we'd get at a regular sushi bar. Next we ordered agadashi tofu, mainly because of Yelp reviews. Meh. I was surprised how bland it was, and how un-crispy it was. The Dashi reduction in the bottom of the bowl improved it, but also was pretty bland. I imagine babies might think it's great. Here are the other selections we made: Salmon truffle: the salmon is supposed to be seared. If I didn't know that, I'd have thought it was poached briefly. There was zero grill color to it. The truffle purée on top was nutty, funky, and savory delicious. The citrus juice was a very nice acidic foil to the savoriness, heavy in yuzu and lemon. Hot Night: did not skimp on shrimp and tuna. It had a nice surprise crunch from the tempura. We enjoyed it. Mr Crab: this was my favorite. I liked the soy paper roll and the plentiful crab meat. YTJ: the fish on top was a beautiful deep red and the jalapeño tempura was a slightly spicy but sweet and crunchy surprise. We ended up re-ordering, we liked it so much. Veggie Tempura: properly fried, normal selection of veggies. It was a good offset to all the proteins we ordered. We ordered a bottle of the "New Zealand Sauvignon Blanc", and two (small) bottles of the Sayuri Nigori Sake. It was only ok. I'd have preferred two bottles of the SB. It was very good. Sorry, I don't remember the label; it wasn't one we typically see on the shelves at BevMo. There really was not much negative to comment on, nothing went wrong, the food was good and the service was superb. I gave three stars because of what I'll call the price-value ratio. Even though the menu was creative, I don't think it added a lot of inherent value. For the same price, or less, I think we could have ordered more quantity of excellent food elsewhere. Also, when considering the model of ordering directly with the sushi chef, even in today's tip-happy culture, tipping a sushi chef might be appreciated, but not necessarily expected. When everything is ordered via the wait staff, we're looking at 20% of the total, which can lighten your wallet more than a traditional sushi dinner would. I'd go there again, but I'd order alcohol and appetizers differently. If my review helped you at all, please rate it below.

Finally a sushi spot in Westlake that's actually incredible! I would always drive out to katsu ya & sugar fish and now I can confidently say seabutter is wayyyy better! Highly recommend! Currently my families favorite restaurant. We go at least once a week!

Our visit here was pretty average unfortunately. We got garlic edamame, a salad, negi-toro cut roll, tuna shishito roll, dragon roll and sunset roll. The negi-toro came first and just looked awful, I should've taken a photo - it looked like my first attempt at sushi at home, really shocking considering it was $3 per nickel sized piece. The sunset roll was by far the best thing, it had a really lovely bright flavor but the other 2 rolls weren't great. Our first server was excellent, friendly, helpful etc. but she left shortly after we ordered and the following person brought us wrong items and wasn't great. All in all we probably wouldn't be back considering the price.. maybe a second try for a sunset roll to go, we'll see.

MEH! Lovely spot in a large mall. A bit difficult to park on the weekend. Nice service however all the fish looked and tasted the same. Hmmm? meh!
