Stayed at the Jerome and dinner with work at Prospect. Able to rent out the restaurant for the party. Fixed course dinner was phenomenal. Great service. Deep pairing of wine. The beef was superb. Every dish was so different and fresh.

Nestled in the heart of Aspen, Prospect at Hotel Jerome is an extraordinary dining experience that seamlessly combines elegance with a warm, inviting atmosphere. From the moment you step inside, the sophisticated decor and attentive service set the stage for a memorable meal.

The menu at Prospect is a delightful celebration of local flavors and seasonal ingredients, crafted with precision by the talented culinary team. Each dish is a work of art, beautifully plated and bursting with flavor. The selection ranges from inventive appetizers to mouthwatering entrees, ensuring there is something to please every palate. I highly recommend starting with the seasonal vegetable tart, which balances freshness with a rich, savory filling that sets the tone for the meal.

For the main course, the pan-seared trout was a standout. Cooked to perfection, it was flaky and tender, served with a delightful side of roasted root vegetables that complemented the fish beautifully. The attention to detail in flavor combinations and presentation is evident throughout the menu, showcasing the chefs' commitment to excellence.

The wine list is extensive, featuring a curated selection of both local and international options. The knowledgeable staff is more than happy to recommend the perfect pairing to elevate your dining experience further.

Dessert is not to be missed either! The chocolate molten cake was a decadent finale, rich and indulgent, paired with a scoop of house-made vanilla ice cream that added a refreshing touch.

Service at Prospect is impeccable. The staff is attentive without being intrusive, ensuring that every guest feels special. Their passion for hospitality shines through, making you feel right at home.

In summary, Prospect at Hotel Jerome is a culinary gem in Aspen that offers an unforgettable dining experience. Whether you’re celebrating a special occasion or simply enjoying a night out, this restaurant delivers on every front. I wholeheartedly recommend it to anyone visiting the area—it's a must-visit for food lovers and a true highlight of Aspen’s vibrant dining scene.

Had dinner at Prospect this past weekend with my family. The decor and staff were great. Totally what I expected from the Hotel Jerome. The food was subpar at best. I chose this restaurant because I wanted to try something new in Aspen. Last year we had an exceptional meal at Bosc, which recently received a Michelin star and thought I would try to find something similar. Prospect was listed as on option on the Michelin site so we were game.
My family all had the 3 option “Taste of Land” which was around $150 per person. The first course that came out was inedible. It was some type of weird spongy pine nut appetizer that no one enjoyed. This was followed by a peach gazpacho and my son and husband had the watermelon salad (which both were great) and finally our entrees. My son had a chicken which was cooked really well. My husband and I shared the wagyu smoked prime rib which was so fatty it was inedible. The dessert we chose was a goat cheese dessert, we all had one bite and then started eating my daughter’s donuts that they had brought over for her from another restaurant on property. Overall the meal was disappointing for all of us who are true foodies, very expensive, and we all left hungry. I cannot recommend anyone ever going to this restaurant. It was such a huge disappointment.

Everything about this breakfast was next level. The service was impeccable. The food was superb. The mood, decor, lighting, and ambiance are rustic modern at its finest. Prospect's huckleberry skillet cake may be the best pancake I've ever tasted. Sprinkling pine nuts within the syrup reminded me of nature from the safe enclave of a delicious comfort dish while acting as a damn fine flavor pairing with locally sourced berries. Their chicken fried steak was cooked perfectly, and so were the potatoes. My wife really enjoyed their fritatta. The service is where this place really shines, though. We felt cared for, and the positivity and concern of Prospect's staff set an incredibly congenial tone.

Blows Little Nell out of the water and treated us right. Whoever is in charge of the restaurants at Little Nell should take lessons from these folks. Good food, great drinks, excellent people watching and the service was on point. I’ll be back every time I’m in Aspen.

Staying at the Jerome in Aspen, and decided to have breakfast here since it was blizzard weather outside. The server for my table was Maggie who was not only beautiful, but was very attentive, and knew the menu well! She recommended the egg sandwich which was absolutely delicious! Highly recommend this restaurant.

Went to Christmas dinner with the family.Food was ok but not amazing which was very disappointing giving the level of the hotel and the cost of the fixed menu ($225 per person).I’m a vegetarian and we notified them in advance. The level of the food and creativity were below average. Not recommending this restaurant for its food. We did enjoy very much the holiday ambiance of the hotel

Vegetarian options: Was very basic. The first course was a small salad that was so salty that could not eat it. The second course was a plate with 3 small potato based dishes that was ok. The soufflé was good. The third dish was some basic dish based on mushroom but was nothing special. The main dish was few pieces of sweet potato that were served as substitute to the meat dish with few sides. This course was really ashamed for the hotel to serve and was very disappointing. The cheese course, sorbet and the desert were tasty but not exceptional at all!

Such an incredible vibe in this place. This is our favorite location to bring clients and friends who are visiting from out of town. Order the Western Front, it’s not on the menu, but it’s the best drink at Prospect at Hotel Jerome. Great beverages and food.

We thoroughly enjoyed eating breakfast here each morning while staying at the hotel. The juice was fresh and delicious. All the food options were great. The almond croissant was best I’ve ever had. The portions were perfect for fueling a morning on the slopes.

The food is well cooked. However, the lady in the restaurant reception today(Oct 08, 2023 10:50 am) is good at passive aggressive. I can't tell why we are asked to provide our phone number more than 3 times and communicated with the lady for 10 mins about our personal information in order to be provided a table. The lady was also not happy for my friend to spell her name for her. She can't bring us in the restaurant if we don't provide our info, she is neither not happy if we provide our info. I can't stop wondering why we were treated in this way. Is that because we did not reside in Hotel Jerome? Is that because we looked like Asian females?Next time, if I get into a similar situation, no matter how hungry i am, I would ask to talk to the manager and ask if they really need customers' personal info before bringing us in. Prospect is a michellin-guide restaurant, but I would never come again. 谁来谁下贱!

Sorry to say this burger is way over priced. It was dry and lacked much flavor. For $30 you’d hope to get more. Just find a good tavern or pub and pay far less for a far better burger.

The atmosphere and service is great. The quality of the food not really up to the price. Basically the quality does not match the high price. Avoid the prawns and the buffalo ribeye is decent. The cocktails are not worth the price.

I hate to do this. Overall, we had a good experience at Hotel Jerome and would stay again, and love Aspen. This is specifically for the maitre’d/host we had during our reservation at Prospect, and not for the other staff nor the food—which was great. I called down 3 times to try to let the restaurant know that we had gotten in later than anticipated to Aspen and could be running a bit behind to make our reservation. Ultimately, we were 2-3 minutes late to a 7:30pm reservation. No one answered the phone so I personally walked down to let them know we had just checked in and were getting our bags settled and would be down shortly. Both the hotel check in desk and the person who brought our bags up, even let me know it would be “fine” and not an issue. We were very cognizant of our later than anticipated arrival and making sure to communicate this. We did not get into Aspen until a little after 7pm. The host however, told me her “staff had been on for 10 hours” and that she wanted them to “be able to go home soon.” I asked why we were allowed to make a 7:30pm reservation if the restaurant was concerned about staff hours. She asked me to “not feel guilty,” to which I expressed she had made me feel extremely guilty! She kept saying things in contradiction: “on one hand, for you, this will be fine,” and on the other “my staff has been here 10 hours.” Is this something you share with restaurant guests regularly? Maybe she was the one who wanted to go home! It was a disappointing welcome, and ruined an otherwise great meal and service from our server and other staff.
