Lovely service but we both got sick after our meal. Suspect either Tuna Tatare or the kale salad [both tasted good going down!].

Came for breakfast, was quickly attended by our waiter Jack. Croque monsieur was very filling, Parfait was a good contrast to the greasy food (non-derogatory). Apple Chicken Sausage is to die for, get it if you have the chance. Other negative review's kinks seem to have been ironed out.

Ate breakfast here two days in a row during our stay. The food was good and all the staff were all very pleasant. The waitress for our first morning was Meg and she was an absolute delight!

Breakfast was average, doesnât accept cash unless itâs for a tip, hotel in room info says opens at 630am, showed up and itâs not until 7. Went for a quick burger for dinner at 6pm and there were 7 open tables but was told I needed a reservation or wait 45 minutes! Iâm paying $800+ a night and canât eat in my hotel, also the room service app is in-op for guests. Youâre a hotel bar/restaurant in a college town, might want to tone it down with the fancy cuisine and long waits. Nobodyâs here for that!

Excellent food and ambiance at Ajax, with minor service kinks to smooth out.
This brand-new restaurant is visually striking, with a stunning, comfortable modern alpine aesthetic. Our dinner was fantastic: the bolognese was clearly home-made and incredibly flavorful, and the drinks menu featured some great cocktails.
The only noticeable flaw was a somewhat slow pace of service. This is typical for a new opening, however, and we expect that as the staff settles into their workflow, the experience will become flawless. Four stars today, with the full five within easy reach. Highly recommended!

Itâs a nice space, conveniently located if you work at the university. Google reviews looked good, so I figured it was a safe bet.
The pastrami, though, was a miss. My fault for expecting something fresh and homemade in this setting. What I got was dried-out deli meatâthin on meat, very heavy on thousand island, a little kraut, and a slice of cold cheese that somehow resisted melting despite what mustâve been 20 minutes under a heat lamp. The bread absorbed all the warmth, crumbling into an oversized croutons by the time it reached the table.
The fries were cold. The Beaujolais had been open too long. The âdecafâ espresso wasnât decafâIâm still bouncing off the walls. And the check was wrong, overcharging me for the pleasure.
The silver lining? The whole ordeal only took two hours. đ

Of the entrees we tried, the ravioli and short rib were the best â five stars. The burger and bolognese were too boring for the price (but bacon jam def made the burger better). Drinks were good, the peach genepy one was the best of what we tried. Get a starter or you might be left hungry.

The butternut squash raviolis is one of the best dishes Iâve ever had. The Caesar salad with fresh dressing was also amazing. Really good dinning experience.

Discovering Ajax for our Sunday brunch was a delightful experience! Located in the new, vibrant Limelight hotel, the restaurant boasts a modern, bright, and warm decor that instantly uplifts the spirit. The service, thanks to Sam, made us feel genuinely welcomed. The highlight, of course, was the kitchenâa pleasant surprise indeed! As someone who often finds âsteak and eggsâ disappointing in the U.S., I was thrilled by the perfectly cooked ribeye, accompanied by crunchy vegetables and a delicate hollandaise sauce (which was added after I took the picture of my plate). For those who, like me, prefer to skip the carbs (and so, breakfast potatoes), the rest of the plate is more than satisfying. The pricing was also pleasantly surprising. Iâm sure this new restaurant is going to become a must-visit spot in Boulder in no time! Iâm looking forward to coming back for dinner or another brunch soon!

We were so excited to try Ajax Tavern on our trip to Boulder since the restaurant itself is beautiful. Unfortunately the experience ended up being pretty mid. Our server was basically non existent. We ordered a beer and a glass of wine and it took 15 minutes for him to return just to tell us they didnât even have the beer.
They start you off with focaccia which sounded great in theory but it was cold and so incredibly salty that we couldnât eat it. We ordered the tuna crudo and Caesar salad next. The crudo tasted overwhelmingly like garlic and the salad was just fine. For mains we tried the chicken which was bland and came as two small pieces with no sides. I ordered a harvest salad with steak added. I asked for medium rare but it came out medium bordering on well done. That said the flavors on this dish were actually our favorite of the night.
Overall for the price point and level of service I would not recommend it. The menu itself sounds amazing which is why we were so excited to go but the execution was not there. They are still new so hopefully they can make some adjustments because the concept has potential.
Community builder on Day 1! Bravo! đ My friend and I were eager to test out & support the new Ajax Tavern at the Limelight. Turns out we were there on Day 11. They had a weekly Tuesday Run Club in the bar which was fun and inspiring. The bartenders, waitstaff, and hotel staff were all very welcoming. The decor and the views are stunning. Everything we had was delicious. The executive chef, Jeff Gundy, came out and greeted our table. He moved to Boulder for the Limelight. We were honored to welcome him to Boulder. What a fantastic magnet for Boulder. See you again soon!

Had an amazing business lunch at Ajax. Prime rib dip sandwich was extremely tasty and the pesto aioli popped. The Wagyu burger stole the show. It just melts delicious flavor with every bite. Will definitely be back!
