Spent 16 dollars for a wagyu french dip at lunch. No side included. Portion ok, but flavor was pretty bland. Beef seemed a bit over cooked and overly salty. Cheese had very mild flavor. Expensive for what I got, wish I had gone to Snarfs. Expected better from a gourmet meat shop

extremely good food, not just resting on their fancy ingredients, every dish does something interesting to make itself stand out
update mid march 2025: unsure if variation or a sign of decline, the lamb chops were mediocre and undercooked for what was asked for (substantial red left when asked for medium). very disappointing, but they were happy to correct the doneness. Hopefully just a fluke.

Decent food but not even 3 star, plus extremely small portions and WAY overpriced!! 2 small steaks the cheapest they had, 1 bowl of spinach blanched in pure garlic butter and 1 bowl of garlic flavored mushroom’s, 1 cocktail and an ice tea. $300.00 plus tip. This place should change its name to The Placebo Effect because that’s all it is. The entire meal tastes like garlic and butter.

Went on weeknight and they had space in add on room at long table. Atmosphere ok for group but less so for couples. Our server also seemed to have e 3-4 tables seated near same time so this particular visit was slow, but has been awesome in past. I think the manager stepped in to take our order to get things moving.
The food was awesome, every dish. My salad and charcuterie board and side of bread, and my husbands fries and steak. You do pay for the quality of food here so we don’t visit as often, but so so yummy!

This place definitely lined up to the hype! The vibe was amazing, I got the blackbelly burger which was juicy and cooked perfectly. I get it pretty plain bc I’m picky, and I wish there had been more bacon on it. The one standout thing for me - and it’s unrelated to meat entirely - is the amount of bread they give you when you order it. I’m used to complimentary bread being like 4 small sliced pieces - and I guess this bread isn’t complimentary so that’s probably why - but it was so much (in a good way) and the butter was amazing. Also wish there had been some more beer options, but thats not a huge deal. Definitely recommend!

pay your employees, boulder isn't cheap! (This place is owned by little piggy hospitality). Shame that you're trying to make CO red.

Came for the valentines special and was terribly let down. When placing a reservation, there was no indication that the menu would include 2 out 5 courses to be seafood. And one course to be vegetarian. I’d expect from a butcher shop to mainly be inland cuisine. The amount of food was not equating to the price that was paid. The desert and wine were the highlight which poses a problem for a meal as expensive as it is.

When they bring back their exquisite roast beef sandwich, I will give them a 5 star rating.
That sandwich is famous among my family and friends.
It being taken off the menu has caused us all deep woe.
Why deprive this challenging world of something that brings great joy?

Overpriced for what you get. Cashier missed a sandwich on my order and wouldn't let me reorder because the kitchen had closed while we were waiting on the missing sandwich
Hubby and I went there to celebrate our anniversary. Super nice service. From the welcome drinks to the icecream at the end and everyone acknowledging our celebration. Only down side was actually the overpriced meat. I understand is market price but $91 for a small steak not even that fantastic was madness to me. I would probably go back and try something different just because Melissa (i hope i got her name right) was superbe with us.

No complaints on the restaurant and I enjoy their breakfast burritos. I wouldn’t recommend Blackbelly as a butcher though. Their beef are not USDA graded but they charge higher than Prime prices…on top of asking for tip. Service at the “market” was not helpful or friendly either. You can get better quality tasting meat at the Whole Foods meats section honestly.

The dry aged duck was amazing as was the chicken liver mouse. The pig ears were a little too crispy for me, which lost the chewiness that the dish normally has and too sweet for my taste with the sauce at the bottom. Service was initially very good when the place was empty, but kind of trailed off as soon as more people showed up. They accidentally threw away something I asked to be boxed and there was just a sorry, but not an offer to redo. Think that should always be at least an offer when a mistake is made. I don’t drink a lot, so sometimes people assume that means less money, but I definitely way over tip when I feel service is above standard. Overall, food was very good and worth a visit!

Food was fantastic. Ordered pig ear, bavette steak, and some wagyu pasta. All delicious. Basque cheese cake was also amazing. Only thing I don't like was the 6% surcharge. The tipping culture is ridiculous and out of control.
