This might have been the best meal of my life. And I don't say that lightly. I had the spring tasting menu and everything was absolutely perfect. Every course was an amazing mix of flavors and textures that were a new combination. The only course that stand out like the others was only was the steak course, and even that was very good. The service and atmosphere were also perfect. I wish I could give this restaurant more than 5 stars.

Rootstalk in Breckenridge is hands down the best restaurant in town. Among all the high-end places we tried, Rootstalk stood out with its innovative recipes and the best French onion soup I’ve ever tasted. Their cocktail, the Ultraviolet, was absolutely incredible. The service was impeccable, and the heritage building has been renovated charmingly, blending old-world allure with a modern twist. Highly recommend!

Each dish arrived, beautifully presented and bursting with fresh, vibrant taste. The attention to detail in every aspect, from the decor to the cuisine, is truly commendable. Whether you're savoring a perfectly cooked duck breast or indulging in their vegetarian options, the french onion soup is the best we tasted outside of France, every bite is a testament to their dedication to quality. Rootstalk Breckenridge is a must-visit for any food enthusiast seeking an unforgettable dining experience, it will not be long before Michelin knock on their door, and you wont be able to gain a reservation.

Food was excellent! However, crowded noisy atmosphere was not great for an anniversary date night. We came to Breckenridge on a ski trip to celebrate a major anniversary. Iyr resort recommended Rootstalk last time we were in town so we made a reservation to celebrate our big day. As soon as we walked in, we were disappointed by the ambiance. Tables are all crowded in very close (it's a very small restaurant). Given the density of the place, the noise level was pretty high and they were playing some pounding techno music. There is nothing wrong with any of this on a normal night out, but it was not the best setting for a special date. All that said, the restaurant set a nice anniversary card at our table and brought us a sip of champagne. As already mentioned, the food was delicious. We ordered the Angoletti pasta and the French onion soup for our starters. Both were good, but the French onion soup was truly spectacular! Best FO we've ever had! We ordered the NY strip and the pork tenderloin entrees. Both were very good. We ended the meal with coffees and the toasted meringue dessert and the bread pudding. Both very tasty!So we would definitely recommend Rootstalk for a fun night not, but not for a special date night

One of my all-time favorite restaurants. We were treated to amazing service (I felt like people were literally just waiting around our table to see what we needed next.) The food is exceptional, the cocktails unique and tasty. Wonderful experience.

The host was incredibly rude to my wife and myself, he actually followed us out of the restaurant and was yelling at us, because after looking at the menu we decided to not dine there. We didn’t even have a reservation just stopped in to look at the menu quick. Do not eat at this restaurant, they don’t deserve your money.
