I knew I was in for something good, but I didn’t expect to meet my soulmate in burrito form. I ordered the Local burrito and it was something I will be dreaming about until my next visit. I would’ve never imagined sweet potatoes in a burrito, but they were the star. Slightly crispy, naturally sweet, and the perfect contrast to the savory eggs, melty cheese, and all the other delicious flavors wrapped inside.

I went with a friend who’s gluten-free, and she raved about how legendary the tortilla was. Perfectly soft, just the right amount of chew, and the ideal tortilla-to-burrito ratio. No falling apart, no sogginess — just burrito bliss.

Also, can we give a round of applause to the bacon? Thick, chunky, and smoky — exactly how I like it. None of that sad little bacon-bit energy. It held its own among all the other ingredients.

Now, let’s talk about the honey sriracha. I don’t even have words. I’m not joking when I say I would fill a pool with it and swim in it. It was the perfect combo of sweet, tangy, and addictive. I would’ve bought a bottle on the spot if they sold it.

If you’re anywhere near Breckenridge YOU NEED TO GET THE LOCAL BURRITO!

Staff is super accommodating for special requests. I always save Semplice for my last meal while visiting Breck and am always sad that I just hadn't come every day of my travels! Usually have a breakfast wrap (Jamal) sitting outside in the sun or shade and a salad (100 Acre) to go for the long drive back home. All ingredients are fresh. Portions are perfect, although I'm disappointed when I reach my last bite, wishing for more! The flavors and combination of ingredients are scrumptious. Will always come back, again and again.

Semplice has a nice concept, but the execution felt lacking. Staff came across as impatient, and basic details were overlooked—no napkins set out, tiny paper cups for water that dont stand up, limited seating, and hot cups used for iced drinks. It seems the staff can’t quite handle the level of business they have and could use more support. We ordered a burrito, and it was served falling apart and we had to eat the sloppy pile of it with one of the sad water cups as a utensil. The coffee was fine, but not worth the wait for food that was just okay. With better cafes in the area, I’d likely go elsewhere next time, like Unravel.

I visited Semplice during my trip to Colorado in mid October 2024. When I tell you, this is the best breakfast spot I’ve ever had. The staff were insanely funny and the panini & matcha I got were heavenly (I’m dramatic but it’s true). I’ve thought about this place constantly ever since I had it and I’m so mad we don’t have this exact cafe in Illinois.

Absolutely the best breakfast burritos in Breckenridge, and the coffee is good too. You order at a window and sit outside, or take the food with you. Really, the folks in town know how good it is because there are usually people waiting out front for them to open in the AM.
