No notes!! Everything was DELICIOUS, the birria quesadilla was delicious and the best churros I've EVER had. My SO also said his tacos were great. Also, I'm so sad I didn't get the name of the woman who was working bc she was amazing, friendly and conversational and so personal. The art is beautiful and when I asked about it she let me know that she wasn't sure of his name but to ask for the owner next time we go back bc it's her cousin. He did the art for the whole place and let me tell you, I need to buy some. 10/10 on everything

I recently visited Chili Con Quesadilla, and I have to say, it was an unforgettable experience! I ordered the Quesa Birria, and it was absolutely fantastic. The flavor was bold, the meat was tender, and the green chili sauce that accompanied it was out of this world—perfectly balanced with just the right amount of spice. My friend got the tacos, which were equally amazing—packed with flavor and freshness. And don't even get me started on the Birria Wontons; they were crispy, savory, and a delightful twist on the classic dish. The entire meal was a flavor explosion, and I can't wait to go back and try more from their menu.
To top it all off, Shana helped us out, and she was super friendly and made the experience even better! She was incredibly attentive and provided excellent service throughout our meal. You could tell she had a real passion for the food, and it was clear she’s an amazing cook. Her warm hospitality made the whole dining experience that much more enjoyable. Thanks, Shana—you’re a big part of why we’ll definitely be coming back!

I travel everywhere in Colorado for work and in have to say…the BIRRIA is the best I’ve had in Colorado. The flavors are amazing, the corn tortillas were lightly crispy and the green chili was great! The staff were so nice. Especially Shana. We’ll definitely be back

Just found this gem today and I Absolutely love this place. The 2 lady's that helped me today I can't say enough about. And the food is incredible. This food is definitely the way to a man's heart lol and if you don't try their green Chile then you aren't living life to it's fullest. Lol I recommend this to every one and they also have a hot green Chile too. Called savage sauce. Super good.
