FIRE!!! We went at first to try the tacos because there are 2 taco trucks up in Brighton. We got 3 carne asada tacos, 2 birria tacos with consume. It was so good, we went back while still in the parking spot. Went back and got carne asada fries, 4 more birria tacos, and 4 carne asada tacos. Red salsa is my favorite, but all are good. This will be regular for us. So close to home too.
The birra/consome was so flipping fire. That's my favorite thing I ordered from there. I ordered a large horchata, And it was also delicious with extra ice. And last but not least I ordered some el Pastor tacos. They were not good. I feel like they were not very flavorful or marinated enough. And there was no pineapple. So I won't get those ever again. Besides that customer service was great. They didn't really speak English. So communication was kinda hard because...
So i guess they now have desserts from the ice cream/ nieveria shop called Gu-lala its in Longmont but tacos los Vaqueros serves fresas con crema chocoflan de 3 leches and cheese cake. OMG they are all delicious.You have to try them because they go so fast.
