Trusted this establishment as soon as I saw the Texas A&M flag and heard his southern accent. The owner was such a gentleman! Other than his hospitality, the food was AMAZING. I rarely, if ever, eat beans, but his cowboy beans might have changed my mind. Everything we ordered was delicious, can't think of a single thing to complain about.

Business owner keeps business vehicle registered in TX to avoid paying car registration fees in CO where the business operates. This means that this business owner wants everyone else to pay for the roads he drives on.

We’ve had brisket, pulled pork and beans on three occasions and have found it consistently very good. Service is great. Onsite seating is limited. I view High Country BBQ as primarily take out. Look forward to a return visit.
High Country BBQ fills an empty niche of Barbecue joints in Buena Vista.I has good, basic selections that are flavorful and well-prepared. The service is attentive and helpful. The atmosphere is modest. Menu selections are around $16 each, that seems to be about 30 to 60% higher than other restaurants in the area. If you need BBQ, this is your place n Buena Vista.
Fantastic BBQ with friendly service! Pulled pork and chopped brisket sandwiches were terrific; coleslaw and potato salad also very tasty, and are made in house.

Hubby and I stopped by for lunch on a Sunday. We ordered the 3 meat plate which our choices were brisket, chicken and pulled pork. It comes with two sides. We wanted potato salad and cowboy beans, but the cowboy beans weren’t going to be done for a couple hours. So disappointing! Since we were sharing the plate, we ordered two of the potato salad. It was a long wait, probably 30 minutes, and we sat outside. The brisket was excellent, chicken was a tad dry, and pulled pork was very good. One plate filled the two of us. Owner said they’re opening a food truck in Salida located on Rt 291 @3rd. We will definitely go again! Good bbq is hard to find.

The meats are pretty good, but need more sauce options. The seating area is okay, but rustic and a little rundown. Their sides are very good, especially the cowboy beans. Price is a little high, but it is a distant location and everything is pricey up there. Overall, it is a worthwhile place to eat, with an interesting vibe. The owner/staff are very friendly, and want you to have a good experience.Parking: Not a lot of spots, but also, not a lot of tables.
