I checked out Marble Distilling for some cocktails. I have to say the Moscow mule is probably one of the best I’ve had in my cocktail adventures. The atmosphere is a chill with an industrial tall ceiling look and awesome staff. The brand is focused on sustainability and the staff talked about some of the distilling process and showed a ton of passion for their business. Definitely check them out when you’re in town!

Marble Distilling is a true local gem. It is not only one of the very best distilleries in Colorado, it's one of the finest distillers of Bourbon outside of Kentucky, (and better than some within.) Many Colorado distilleries end up producing a very similar whiskey; a coppery spiced brown liquid, underaged and comparable to a (sometimes) slightly better version of Tincup. Marble mostly avoids this failing. Their brown water is rooted in tradition yet still able to maintain unique characteristics.The whiskey may be the star of the show, yet all of their spirits are worthy of a spot in your cabinet. The gingercello and moonlight espresso especially are best in show. There's a reason you see these bottles behind every bar in Colorado, as they remain an effective and delicious way to elevate even the most basic cocktail. A focus on sustainability largely unseen in this industry make them true pioneers and worthy of praise.The tasting room bar is warm and immaculate, with finishes of yule marble gorgeously displayed. Hot appetizers (or "tapas" if you speak hipster) is a delicious and much welcome addition that finally makes this beautiful space feel complete. You'll be grateful to have something more than dry charcuterie to accompany your journey through tasting flights and well executed craft cocktails. This is, without doubt, one of Colorado's finest settings to revel in the joy of distilling in.

When we’re in Carbondale we always stay at the Marble Distillery Inn. The rooms are modern, very comfortable and the friendly attention from Jessica the Innkeeper to ensure everything is just right. During our latest stay in December, the Distillery went leaps over the top serving us a new tasting room tapas menu sampler in front of the cozy Barrel Room fireplace. The bacon wrapped dates were fantastic but the boozy whipped cream over pine cone brownie melted us to a puddle. Thanks Jessica, Connie and all the rest at Marble Distillery!

Nice little spot with very well done rooms. Right on main street but still quiet. Lots of shops and restaurants within walking distance. The onsite tasting room has great drinks and small plates. I’m a wheelchair user and the Moonlight suite is very accessible with large bathroom and roll-in shower.

Came here with two girlfriends for a pre dinner cocktail and yum! We all had the same drink, a cucumber gin in a coupe glass. It was a little sour and so refreshing! We sat at the bar and the bartender was super nice and chatted with us for a bit. Only bummer was that we ordered a bruschetta board when we sat down and it took about 30 minutes for it to get delivered to our table. However it was delicious once we got it (it was supposed to come with four different bruschetta but we got three). The tomato and mozzarella one was a standout!

My friends & I stopped in on a girlfriend weekend trip & ended up staying all afternoon!? We absolutely loved this place! We each did a flight & then all had an espresso martini (to die for by the way)! We bought some spirits to enjoy at home & can’t wait to visit again someday! Wow. I have NOT visited the distillery, but I bought a bottle of curated Hoover's Revenge. A very bright, fresh, whiskey, with uncommon depth and complexity. The whiskey uses a tritcale grain which is a cross between wheat and rye. This grain is normally used for livestock feed. It makes a whiskey that has the sweetness and smoothness of wheat with the fire and liveliness of rye. Plus the marble filtering leaves a very clean product where the grains and the barrel shine through. The mash bill also includes barley.I tasted, and acquired this bottle at The Vault at Stanley in Estes Park. The bottle was a revelation. I am now adding this distillery on my list of 'must visit' in Colorado.

The drinks were phenomenal and our server, Kent, went above and beyond..He was so very friendly and helpful. Our group was a handful (there were 11 of us) plus the we were purchasing cases to take home with us. He was very methodic and didn't flinch.
Marble Distilling makes excellent products especially their Moonlight Expresso. Highly, lightly recommend a stop there!
