Love Pegasus, just happened upon it a few years ago and stop by when passing thru castle Rick on occasion. Great food , drinks and atmosphere

Love the food, wait staff and owners. Owners are always around and incredibly nice and friendly. Love the specials they have.
Went there this Wednesday at 10am for some breakfast. Took 15 minutes to even get a waiter. Potatoes were burnt, never offered another drink or water refill. Never saw waitress again until the bill. She took a 10 table right next to us and ignored us for 30 minutes. Not sure I'll return.
You will pay for it, but it is a totally amazing place to eat!!
Pretty good food, good atmosphere, quieter than other places I've been to recently. I can't stop thinking about the $4 Pepsi products price point though, it bothers me, it's one step away from buying from a scalper at an event somewhere. It's not a large cup either. Just think it's odd $4 for a soda and $16 for a meal, the soda is 25% the cost of the meal? Hot tea is $4.25 for example.
Anyways, ordered the Mexican Combo #3 enchiladas, pretty good quality ingredients, chicken was a little dry, salsa on the side was delicious. Refried beans tasted great. Good overall meal experience. Portion size was smaller than expected. All seats are hard seats, they have normal height chairs/tables, half booth/table, booths, and a nice wrap-around bar.
I don't care how much money I have, $4 for soda is too much. Get water instead is the recommended play. Good food, odd pricing structure.
The restaurant we had picked online by reviews was closed on the 4th ( but they didn’t mention that online) but the Smart folks at Pegasus Castle Rock had a sign saying they were open nearby.

The food choices, taste and service were first class. Kudos to our server, Van. He made our dining experience enjoyable.
I had the chicken fried steak, eggs and hashbrowns. Plus sides of biscuits and gravy, and bacon. Family also had a waffle w/blueberries and 2x Huevos Rancheros. Also a shared cinnamon roll. All were excellent!
With drinks everything came to about $25 per person.
We all would highly recommend this restaurant.

Best service and amazing breakfast. Van was our waiter and I never had to ask for coffee. He offered great tips and suggestions for add ons to our Belgian waffles. The cinnamon roll was a perfect appetizer. Huevos Rancheros were not Texas style but they are the best so far in Colorado. The salsa had great flavor. It wasn't spicy but it was full of flavor. Highly recommend. They accommodated everyone well considering it's a holiday with no our limited waits.
Food was great but small portions for the price, service was slow and forgot our cocktail menu so just stayed with the coffee... We will return again. The place is cute!!

Coffee is the cheapest the orange juice is watered down. Service is horrible. You can get it better at McDonald’s!

On Friday, December 20th, we decided to stop at the Pegasus Restaurant on our way to the outlets for a quick bite. We arrived in the late afternoon for brunch and were seated after a short wait—not a big deal considering the restaurant's popularity. The ambiance of the place immediately stood out, offering a cozy New Mexico vibe with a menu to match.
I ordered the Mexican plate, and my wife chose the Chiladas plate. Both dishes were flavorful and well-prepared, with the hallmark of their cuisine being the use of green chiles. Just about everything on the menu features green chiles or is smothered in them, which adds a signature touch but might not be ideal for those who prefer milder flavors.
Our server Carolina was excellent, striking the perfect balance between attentiveness and giving us space to enjoy our meal. They checked in just enough to ensure we had everything we needed without being intrusive.
Overall, the Pegasus Restaurant delivered a unique dining experience with a strong New Mexico influence. If you’re a fan of green chiles or enjoy a bit of spice, this spot is definitely worth checking out. For us, it was a great stop on our way to the outlets!
