Bird Dog BBQ

Ate here for the third time a couple days ago.
First experience was shortly after moving to COS. I ordered a sliced brisket sandwich and was informed that only chopped brisket was available because our “brisket is to tender to slice”, even my 20 year old daughter thought this was hilarious.
2nd time I ate here was a case of time heals all wounds and the fact that I’m a slow learner. I ordered the ribs & turkey, both were horribly dry and just not very good. I’m truly at a loss for how a business that earns its keep in bbq simply cannot figure out cook times/temps/holding.
3rd time I ate here (dragged kicking and screaming) I ordered their hot links as a side and the server told me that he was not happy with the quality so encouraged me to order beans instead. I declined the recommendation and got the sausage, which he discounted.
Just a heads up Bird Dog.. I f one of your menu items is so bad that you recommend people not order it.. PULL IT FROM THE LINE!!
The servers were all really nice and I hate to bash a small local business but this is not what bbq is supposed to look like

This place has gone down hill in food quality since it opened. The brisket sandwich was so dry I had to drown it in bbq sauce. Not to mention the meat was room-temp at best. The only slightly redeeming quality to this place now is the service and how empty it is for peace and quite.

Excellent BBQ. Sides are delicious as well. Seating is the reason for a 4 atmosphere. It is good but could be a bit better.

Food is good, little bit expensive but BBQ is always expensive.
Good meat they can do better in the sides.

Wasn’t planning on eating here but was setting down the opposite end and kept smelling something wonderful so being from Texas when my friend came back to car I said we are going to follow the smell and guys it was amazing give them a try

The lead/manager Chris was so kind and attentive. The food was great as always, but he was a nice surprise!

Wasn't anything special. Overpriced tbh. Tried pork brisket mac n cheese and beans. If it were half the price idk if id come back tbh. Employees were nice. Portions were extremely light. Like under portioned. How do you run under portioned over priced mids bbq? The sauce was terrible. Light on flavor throughout the entire meal

It's real hard to find a good BBQ spot but Bird Dog is pretty good.
