Carlos met us at door and knew our names from reservation. Seated immediately. Food was among the best I've had in a long time. The menu is extensive. It would be hard to imagine anyone who couldn't find several things they would want to eat. We liked that their steak sizes started at 4oz. Plus the filet was delicious. I will be back whenever I'm in Colorado Springs. If this was in Denver I would eat there often.

Carlos' is our special place and this visit was for a birthday celebration. Carlos greeted us at the door and seated us. Our server was very attentive and knowledgeable of the menu and their current special. Our cocktails were delicious and looked fantastic. We had the mussels for an appetizer; this was a great choice and the sauce was perfect for bread dipping! I had the elk steak with chutney sauce and The Babe had the fruit de mare. Both dishes looked fabulous, great presentation!, and tasted great. For desert, we had the brandied cherries and creme brulee. Both are favorites for us and go great together! Throughout, the service as fantastic; like visiting family! We definitely recommend Carlos' Bistro for all your special occasions or just whenever you want a fantastic meal with great service.
This restaurant is a hidden gem. The staff and owner are absolutely lovely. So incredibly friendly and kind. Service is amazing and the food is outstanding with a lot of variety. Definitely a must visit in Colorado Springs. 
This is the one of the nicest restaurants I have ever been to. Carlos (the owner) was exceptional. He greeted us as soon as we arrived. He called each person by their name. His personality and energy demonstrated his love of cooking and pleasing the customer. The ambience is very classy with black tablecloth, tasteful lighting, and European decor. The food was tasty and extremely well presented. The outside of the restaurant is plain looking, and you might question its quality; but trust me, go inside you will not be disappointed. I would recommend this restaurant to anyone looking for a high-quality meal and trying to impress.
My family had an absolutely wonderful dining experience. Carlos went above and beyond to ensure we enjoyed every aspect of our dinner. We could not recommend this restaurant any higher.
Carlos' Bistro – one of the best places my wife and I have been to. I took my wife here for her birthday. As we parked, Carlos was standing outside. As we were walking to the restaurant, he came walking up to us and introduced himself. We all go in and my wife and I are seated. There were 4 other couples in the restaurant. And the first thing I noticed, and really liked, was the ambience. Just enough light, quiet to where my wife and I could have a conversation. Our server, Liz, was phenomenal. She knew the menu inside and out. She has been with Carlos for many years. And she was one you could easily trust with recommendations from the menu. The food was top notch. The appetizers were just right – not too much to fill you up before dinner arrived. And I have to say, the music playlist on the evening we went was all 80s (my jam). Again, not too loud, but just enough for us to enjoy the music while being able to have a conversation. And here's the other thing my wife and I noted to each other – not once, during the entire evening, did we ever look at our phones (we are sometimes very bad about this). Carlos came by and checked with everyone. It is clear he really cares that his customers have a great experience. And when my wife and I go back again, we're going to plan for it to be an evening where Liz is there. There was nothing negative about Carlos' Bistro. If you've never been, it is well worth going. You won't be disappointed!

Wowww! Carlos did indeed impress. He greeted us as per other reviews and was personable. Very kind eyes and a sincere passion for excellence.He continued to check on us throughout the evening ensuring our overall experience met expectations. Liz was our server. Everything she recommended was perfect! She is knowledgeable, professional yet still personable. My husband and I felt special and cared for. We stepped out of our comfort zone and tried the Elk and Buffalo….definitely going back. The food , service and atmosphere are worth EVERY dollar!

Carlos Bistro was such a pleasant surprise! The owner Carlos came outside to greet us and made us feel right at home. This place has an old world European feel as far as ambiance and service. The specials were a little high for us, especially since we cannot eat large portions. but sounded wonderful. Judging from the size of our dinners they could be shared by the table. For appetizers we had the oysters Rockefeller and the fried frog legs with lemon aioli, both were wonderful. We had the ribeye with peppercorn sauce, and the tomahawk pork chop with apple sauce. Both were delicious, and very large portions. Will definitely come again if we get back to Colorado Springs
Carlos Bistro is a must-visit! The food is absolutely delicious, with each dish bursting with flavor. The attention to detail in the presentation and taste is impressive. The ambiance is cozy and welcoming, making it a great spot for a nice dinner. I can't recommend it enough—definitely looking forward to my next visit!

What a gem! Our neighbors recommended this restaurant to us and we were not disappointed. The owner greeted us outside and sat us immediately. He frequently moved through the dining room talking to patrons checking on them and making conversation and recommendations. Our server was very attentive and also had great recommendations. The restaurant was small but very charming. The food was incredible. Definitely going back and soon.
The Elk they recommended was excellent but they didn't mention the price. $120 for an Elk rib was a bit expensive. If they mentioned that upfront, I might still order it but I don't like surprises.
