We had to make a quick trip to CO Springs and on the way out wanted to get some lunch. Haven’t eaten at a Mimi’s in years since the one near me closed down so we immediately stopped. Our server, A.J. Was AMAZING!! So friendly, knew the menu well and was able to give suggestions and answer our questions. As always, the food was excellent!

We stopped coming here a couple years back after a string of bad experiences, finally decided to give it another shot tonight and glad we did.
I’m not sure if they got new management, a new chef, a new food vendor, or a mix of the lot, whatever changes they made they worked, this was a much better experience with excellent food and decent service similar to what we got here in years past.
