The line can get long, but it’s not any longer of a wait to the surrounding businesses!

This is my favorite bakery in Colorado. I’ve never had a bad experience. My favorite loafs are the seeded red (every day) and the cheddar herb (Saturdays). All their loaves have a delicious crust while still being soft (great crumb). The seeded red makes for a great bread for sandwiches and avocado toast. The cheddar herb is my go to for dinner parties. The tray is always empty by the end of the night. I like slightly toasting it and pairing it with soups.

Their buns are also delicious. The jalapeño cheddar pairs well toasted with ham. I eat the fruit and fennel bun plain for a dessert.

Because it is fresh bread, it can go stale easily. However, it freezes like a dream. I usually cut it in half, wrap a half in a paper then plastic bag, and put in the freezer. Give a couple hours to thaw. The texture and taste does not suffer.

The pastries and sandwiches are also amazing. The chocolate croissant is melt in your mouth. The salmon sandwich is my go to for a lazy lunch.

The prices very good for the quality and amount. The only thing to keep in mind is that they usually sell out Saturdays. I recommend either going on a not Saturday or trying to get there near opening.

I was not exactly ready to see a full parking lot and line at a bakery when I got there.

The line moved fairly quick, and had a separate window for what seemed like just sandwiches. We order a few pastries and a baguette since I am always trying to find some good basic breads.

Everything was great, the baguette was great with a crunchy exterior and a soft pillowy interior. The morning bun is almost a perfect morning pastry not too sweet, but sweet enough. The chocolate crossiant kind of stole everything for us.

They were out of breakfast sandwiches by 930am so if you want one show up early. We plan to go next weekend for the sandwiches.

As someone who's lived in France, Germany, and Austria, I can say that Nightingale is on-par with or better than most European bakeries. Highest-quality local ingredients and incredible variety of bakes. My girlfriend gets raging headaches from virtually all American bread; but she can enjoy anything that comes out of Nightingale. We had a great conversation with the owner, who helped us consider that it may not be gluten sensitivity that steers so many Americans away from bread, but the highly industrialized US processing - including countless herbicides and additives - that renders most bread in the US tasteless and painful to eat. Thank goodness Nightingale Bread is here.

Vegetarian options: It's bread, bro.

Dietary restrictions: Short of celiac disease, if you've been avoiding bread due to how it feels, you owe it to yourself to give this place a try.

We came to go to the coffee shop next door but realized this place was right next to it, which was awesome because I’ve been wanting to try it for a while! We were a few minutes too late and they were closing, but the guy who was there was so nice and we got to try a sesame baguette and morning buns and they were sensational! Like my goodness, they were heavenly! We can’t wait to come back within business hours ?
