Bison Pastrami Reuben — A standout sandwich featuring tender Rock River Ranch bison brisket, tangy house caraway-apple kraut, creamy Russian dressing and melted Swiss on perfectly toasted marble rye. The flavors were rich and well-balanced, with the bison adding a more robust, slightly gamey depth compared to a classic corned beef Reuben.
Wedge Salad — Crisp iceberg with juicy tomatoes, candied pork belly, house blue cheese dressing, sweet chili glaze, blue crumbles and crispy onions. It was fresh with a nice interplay of textures and sweet-savory notes that complemented the heartier mains. 
Bison Chili — A bowl of hearty Chili Colorado made with ground bison, black beans, onions, white cheddar and green onions. It was comforting and flavorful, with a nice kick and plenty of depth — great as a starter or side alongside the sandwich.

Got there for late dinner just before the live music started. Got the stuffed chicken breast. It was okay. Not really seasoned and had very little goat cheese stuffing. Others in my party got salads with grilled salmon and they really enjoyed them. Service was fantastic! Place was hopping by time we left.

Someone recommended Appaloosa Grill while we were on town for a conference. The service was ABSOLUTELY TERRIBLE!! We waited over an hour for checks so we could just leave.
We’re visiting from out of town and we will not be back. We made a reservation for a group of 15 people. We were immediately seated and drink orders taken. That was the only good.
I had the green chile bison burger. It was ok. The patty wasn’t very flavorful. The sweet potato fries were the highlight of the meal.
Our waiter was bad. Very bad. After drinks it took about 30 min to get meals ordered. Then after we were done it took an hour to get our bills, then another 20 minutes for him to pick up our cards. We’re still waiting for our cards to come back. It’s been over 2 1/2 hours since we got here.
A band started playing, I have to be one of those people. We’re in a small space. We all have our ears plugged. It’s like the volume is for the people walking by outside.

The food was great. The NY strip was cooked perfect. It was flavorful. The fries we order with it were also great. Good crisp and perfectly salted. The bison burger was good. It was cooked to order and had decent flavor. The atmosphere was a little darker that I would have preferred. However it is also a bar and it was 7pm when we ate there. So that is to be expected. I would recommend it and I would go back.
