If you’re in Denver and haven’t stopped by NOVO Coffee yet, you’re seriously missing out. We had the chance to do a coffee tasting here, and it wasn’t just good — it was memorable.
The vibe inside is laid-back but intentional, like a hidden creative hub for coffee nerds and curious wanderers alike. From the first step in, you can tell these folks care about the craft. Special shoutout to Simon and Heather — their passion and knowledge made the entire experience come alive. They didn’t just serve coffee; they told the story behind each bean and roast in a way that made you appreciate every sip a little more.
We tasted a lineup that covered the whole flavor spectrum — bright citrus notes, rich cocoa and berry, and even one that had a delicate, floral finish that caught everyone by surprise. Heather brewed each pour-over with precision, and Simon gave us the lowdown on origin, processing, and what to look for in the tasting. It was interactive, engaging, and honestly, kind of eye-opening.
Whether you’re a coffee connoisseur or just someone who appreciates a great cup, NOVO offers more than caffeine — it offers connection. Five stars, no question. And thanks again, Simon and Heather, for making it such a fun and memorable part of our trip.
Excellent place to get high-quality whole bean coffee, both blends and single origin. They also have cans of nitro cold brew for sale, and free samples of said nitro cold brew. They also sell brewing equipment like pour-overs, some tea, and even coffee flower tea, which I never knew was a thing.
A now-defunct coffee shop down the street used to serve Novo coffee, and going there all the time turned me into a coffee snob. I can’t believe I actually used to enjoy dark roasts from Starbucks for 15 years. Now it tastes like nasty bean water to me. There’s so much more depth of flavor in a light roast like they sell here.
The public tour and cupping was a lot of fun. It was fun to try and pick out differences in coffees and try and figure out what I liked. And good coffee too.
Novo Coffee is an excellent, coffee-forward café in Denver. I highly recommend visiting their cafés and the roastery. The staff is very knowledgeable and friendly! I bought a demitasse and some freshly-roasted coffee. Thanks for the impromptu tour!
Stock up on Denver’s best bulk whole bean coffee from all over the world.

Best coffee! Very nice people.Bulk coffee only. Not a coffee shop.
We booked the Friday Tasting and Tour session for our company retreat, and everyone loved it! They were all big food nerds who really appreciated the deep dive into coffee roasting and brewing. Colin, our tour leader, was extremely personable and knowledgeable, guiding us through the entire warehouse, roasting, and sipping process. In terms of the coffee, I was particularly surprised by their Indonesian-sourced beans, which are traditionally not my favorite, but is absolutely beautifully roasted at Novo.
Just stopped by (didn't take a class there). It's their roastery- so they don't serve coffee other than some excellent (and free) nitro cold brew on tap. Whole beans are available on sale. There are tours and classes - according to an employee there - they have a $20 tour on Fridays that includes a bag of beans (although didn't go myself).
I took the brewing class and it was informative. The instructor was knowledgeable and fave clear answers to all the questions. My favorite part was trying different brews of coffee to tell which coffee tasted horrible and which tasted great and what made them that way.

Online it says they serve coffee, they don’t. I asked the salesperson a question about their coffee and they said they don’t know the details of the process. They don’t know about their beans and they don’t serve coffee. Go somewhere else.
I booked a "seed to cup" class for my husband's birthday (I sent my husband and a friend). Novo charged $85 per person for the general public. I thought perhaps they would be offered a free cup of coffee or a small bag of their favorite roast. It was a lame course that they put on for employees and just charge an outrageous amount to the public. The cost should be $20-25 for simple experience, not $85. My husband said the person leading it was very nice, kudos to the leader. I do not recommend taking this tour. Spend your $85 on several bags of coffee at another roastery.
I've had 3 different Novo coffees mailed to me this year via Trade Coffee subscription and all 3 have been incredible
