If I could give this place a zero, I would. The manager is in over his head and tries to cover up his mistakes with lies instead of taking accountability and trying to provide any quality customer service.. or solutions at all.

We booked this for NYE with high hopes and really wanted to like it.

I booked the reservation a month out. They cancelled my reservation two weeks later and messaged me saying that I needed to rebook and put a $100/person deposit down with a 20% tip for a special curated four course meal. We were looking forward to checking this place out for the holiday, so we put the deposit down.
A week before, they messaged me again saying that they weren't having this special menu anymore and instead they're doing an a la carte menu. I should've known then to steer clear of this place because they were clearly disorganized and had no plan or vision.

Once we actually got to dinner, all of the food was either very weird tasting or completely bland with teeny tiny portions for the cost, not that you'd want anything to go. We ordered sides, apps, main entrees and even dessert. They say they're going for "simplicity" but it felt like they were trying too hard and ultimately failed horribly. None of it was more than tolerable at best. We barely ate the food and didn't take anything to go.
At the end of the meal, we were surprised to get a bill without a credit since we already paid for our meal in advance. The manager came over saying that we were refunded. We showed him that we were not refunded just charged. He then said we weren't refunded yet, but would be soon. We expressed how displeased we were with the meal and the back and forth prior to the reservation that had led us to this point of needing to pay for this horrible meal a second time. The manager admitted that their actions were silly but didn't even bother to apologize for the horrible experience or offer any type of resolution.

Horrible food and experience for way too much money. This place is extremely overpriced. There are much better places you can eat for this price or for way less..

The restaurant responded to my review on Open Table with lies. They never mentioned a refund when they made the change, they never offered their rooftop restaurant as an alternate option for my deposit, I told them about my displeasure with the overall experience and food on site but the manager offered no solution or even attempted to apologize. He merely agreed with me that their actions were silly.

Save yourself (and your taste buds) the time, headache, and money by going somewhere else.

Thoroughly enjoyed lunch with five friends; we had secured a reservation. Terrific service from Orlando and Staff. I had the savory beignet starter, Sapaio cabernet to drink, ruby trout as my main dish. Delightful, fresh, flavorful. I am definitely returning for dinner. Sitting at the bar for a glass of wine before lunch was pleasant!

Food was bland, service was slow, and manager was on the spectrum. I’ve had better meals at McDonald’s so please save your money. Plenty of other great restaurants in Denver. Also was double charged for the meal.

First off, the atmosphere is amazing. Very nice, comfortable booths, cool room. We arrived an hour before they close, but the hostess told us they weren’t seating any more parties. There was no line of people waiting, so i then asked a waiter if we could get a table, and he sat us right away. The hostess looked like she was 10 years old. That was very weird. My friend and I just ordered the crab soup, since we weren’t that hungry. After our first bite, we both looked at eachother and made a face of disgust, simultaneously. It was vile tasting. Not just bad, but vile. The lemon additives were really extreme. And the soup was $21. A month later, every once in awhile, i can still imagine that vile taste…coming back to haunt me. It wasn’t that the crab was spoiled, it was just a weird combination of bad flavors. But yet, these high end restaurants in Denver keep embracing these hipster chefs that come out of culinary school, that think the weirder the food is, the better. Who cares about what it tastes like, right? Lets go back to basic, good quality food that tastes good. If this place doesn’t, it won’t stay in business. These hipster chef driven restaurants have been closing left and right lately. I hope the owners are reading these reviews.

First, if you live in Denver, go ahead and just do Valet. For $10 you can decide to not worry about finding parking.

Upon entering the lobby we were kindly greeted and ushered to our lovely half-moon booth with the Christmas trees lit up just behind us. Julio was our server and he was as kind, accommodating and as lovely as one can be! He was always prompt and timely and brought over anything we may have needed.

T H E F O O D -
We ordered the Beignets, Lamb Tagliatelle, Roasted Chicken & Bison. Firstly, these dishes are very, very rich, so order w/ caution. I suggest adding the Farm Salad to your order! We kept seeing it walking by and really should have ordered that in tandem w/ the more rich dishes. For dessert, we chose the Chocolate Budding - The blood oranges were so pretty and soft on the palate and the chocolate mousse was so thick and chocolate-y. Yum!

For how fancy-plated the chicken is, it filled me up!
The Bison wasn't my thing but the boy ate it and liked it.

T H E D R I N K S -
We ordered the Planes & Trains and Milk Punch cocktail. The Milk Punch takes 48 hours to clarify and is quite light on the palate w/ a hint of dehydrated strawberry. Planes & Trains was similar to the classic Paper Plane cocktail. So juicy & delicious!
We also decided to pair our fab dinner w/ Pierre Gerbais Champagne. Just do it.

I had the pleasure of trying two incredible drinks that were not only delicious but beautifully crafted! Each cocktail was a work of art, showcasing vibrant colors and exquisite garnishes that made them almost too pretty to drink.

Kat, the bartender, was nothing short of amazing! She craft the perfect drink truly shone through. She took the time to explain the ingredients and presented each drink with flair.

If you're looking for a fantastic experience,, I highly recommend visiting and trying these exquisite creations at PASQUE Bar inside Populus building. Thank you, Kat, for making my visit unforgettable!

My husband and I stopped by to have lunch and drinks at the new bar Pasque inside the new populus hotel and our bartender Kat was absolutely amazing!! Our drinks were delicious and she was so nice and made us feel so welcomed! She’s an amazing bartender, if you have the opportunity to have her service you please do, she’s amazing!

We had brunch here after we checked out of the hotel and had a lovely experience. Miguel took fantastic care of us and helped us to choose our meal. We split the smothered breakfast burrito and a muffin, and it was just the right amount of food. Both were very good, but the smothered burrito could have used some more smothering because the green chili was delicious, but sparse.
