The restaurant is beautiful. Impeccable decor. We had two people serving us, the waiter and the woman who brought and cleared the dishes. The woman was very friendly and proactive. However, we had bad luck with the waiter. It took an hour for our wine to arrive at the table; before that, the first two wines we chose weren't available. The dishes are small, as are the appetizers. The flavor was incredible, only the quantity wasn't worth the price. The wine only arrived with the main courses, and in the end, we had to take the wine home because the restaurant was about to close. Perhaps we were just unlucky that day. However, the taste of the food, the decor, and the background music were a 10/10.

Had brunch for Valentine's Day while we enjoyed our stay at populus. Staff was very kind and knowledgable. Food was great! Will be back!

Overall very good. Two items we ordered were perfect. Tagliatelle with lamb ragu. And a London Fog Cake. Two others, a salad and savory beignets were pretty darned good, too.

Pasque was an amazing new food adventure. We didn't even know it existed until we saw it on a farm to table restaurant list. We spontaneously booked an early dinner and stayed there for 3 hours. Great innovative food, super friendly staff, beautiful ambiance and sustainability mission as a hotel and restaurant. A+ experience!

Based on the reviews, I expected this to be a fabulous meal. The ambiance, cocktails, and personality of the servers was superb. However, the food was terrible. The main elements of our entrees, with the exception of the duck. were overcooked and over salted. We asked for wine to come with the entrees and had to ask for it twice. Very chaotic and clumsy service...our main server was fab, but everything was poorly timed and we asked for several things multiple times. We were celebrating a birthday and the crème brûlée sounded so lovely, but the persimmon we got was overripe and mushy. Excellent bartender. Everything else left a lot to be improved upon. Will likely not return.

We started the evening with a Negroni and a Modena Spritz, both of which were well made and a nice way to begin the meal. The appetizers included badger beets, venison tartare, and savory beignets—all enjoyable and thoughtfully prepared. The entrées were the true standouts of the night. The duck breast was cooked to perfection with beautifully crisp skin, and the bison, recommended medium rare, was also executed flawlessly. Both dishes showcased excellent technique and flavor. For drinks, I enjoyed a glass of Sauvignon Blanc with the appetizers, followed by a Pinot Noir paired with the duck, and finished with a tawny port alongside the persimmon crème brûlée, which was a lovely ending to the meal. The ambiance was pleasant and inviting. Service was friendly, as our server was kind and attentive, though a bit unorganized at times. Another server came by to take drink orders as our drinks were already arriving, and there was a brief mix-up when a bottle of wine was brought instead of a glass, which we had to stop before it was opened. Overall, the food was excellent and memorable, with minor service hiccups that didn't take away too much from an otherwise very enjoyable dining experience.

The environment, décor, and service were all great. However, the food was a bit too salty for my taste. Everything else was nice.

We live in south Denver but come in to the city from time to time for shows and what not. We love dining at Pasque, and especially bringing friends with us , before a show. It's always been a great experience. Food and service have consistently been outstanding! We love having a drink at Steller Jay's before dinner to take in the Denver skyline.

Opentable Diner

The weight staff was superb. The hostess was so incredibly sweet and I feel like we lucked out because it was Thanksgiving weekend so it was quiet.

I realize it's a hotel-based restaurant, but $20 for a breakfast burrito with nothing else on the plate is a bit much. This isn't NYC. The ambience was nice, the service was good, the food was fine, but not exceptional. Would I go back? Probably not.
