I had a short layover in Denver and was pleasantly surprised to enjoy a take away item so much, normally they lack flavor. I got the Tofu Banh Mi Sandwich. I loved the mix of textures, soft bread and tofu with crunchy jalapeño and pickled vegetables and cucumber. The sriracha spread gave it a hint of spice but not too spicy for us babies that can’t handle it. I’d definitely recommend! I ate one half immediately then saved the other for when I landed at my final destination.
Wow, this is definitely the best airport meal I’ve ever had! I’m so used to eating crappy avocado toast, so this is definitely a diamond in the rough. I got the country friend tofu and it was incredible, totally rich with flavors. I didn’t even have to add hot sauce, which is rare for me! Definitely will eat here whenever I’m at the Denver airport!
Nearly every time I fly out I grab a tofu banh mi sandwich from the grab n go counter, which I am super grateful for. Vegan food is slim pickin's when it comes to grab n go generally, so I am thrilled to eat so well when I'm flying out. Before Root Down, well, set down roots at DIA, we had to settle for a plain bagel with no spread, nothing. Now I get a tofu banh mi!
Everything about this place was great. Food was awesome, service was on point and cost was not bad at all.

Do yourself a favor and order the Country Fried Tofu. It didn’t sound like much on the menu, but wow. So flavorful and delicious that I might start flying through Denver on purpose. Wasn’t cheap but was worth it. I’d be shocked if you could find me a better vegan option at the airport.
I have been coming to Root Down since they originally opened in the DEN airport and I have tried almost everything on the menu. My favorite, hands down have always been the honey smoked salmon on top of the beet salad. Like any normal day, I placed my order with my mouth watering in anticipation of my salad as I had been waiting for 2 days for my meal. When I heard that the honey smoked salmon was no longer on the menu, I almost cried, I couldn’t believe it! There is not another option for salmon in the airport, so I did not have a choice other than to add the new salmon to my salad. The replacement was terrible! I could only stomach about 5 forkfuls before throwing it away in disgust. That was $30 wasted. While they screwed up with the salmon, at least the desserts have improved and the oreo cookie sandwich was great. Please bring back the smoked salmon as I am sure there are a lot more disappointed travelers than myself.

The manager on duty tonight was beyond worthless. They had issues with their computers and the manager made things worse. The only saving grace and reason I'm not giving 1 star is for Sandra Balderrama our waitress that picked up the weight the manager dropped.

Ordered the country fried tofu sandwich. Got a country fried tofu bowl. They told me the sandwich was the bowl. I feel they were thwarting my universal desire for a sandwich on purpose as a penalty for being so handsome? Anywho. I went with it. For a vegan tofu bowl in an airport, 11 stars. Or 3 adjusted for regular food. Dish was flavorful and full of good ingredients but wish it has a little more sass. The tofu was breaded well, just too thick. If it had been half the thickness it would have probably gotten that fourth star A few more vegan/veganizable items on the menu. Provided they actually exist or you are not too handsome and they desire to squash your food desires.
Great place to get a bite and a drink if you are paranoid and feel like you have to get to DIA 3 hours early.

Never did I expect I’d have one of the best meals in my life at an airport.
I got the country fried tofu - one of a couple vegan options on the menu. The menu description was sort of vague. I didn’t really know what to expect, I was expecting something vaguely southern with a scoop of lentils and steamed veggies. This is not that.
The dish surpassed all possible expectations. This is such a thoughtful dish- everything on the plate felt complex and fully developed, and each part felt intentionally included to harmonize with everything else. The tofu is only part of the story - substantial pieces with a bite and a crisp exterior with subtle hints of French toast. The plating is so thoughtful. The tofu is kept crisp by sitting atop a bed of slaw, with a creamy curry under the slaw. The slaw is able to both stand up in texture to the warm curry and also insulate the tofu from losing its crispness.
The tofu is accentuated by a jammy tomato-onion chutney that brings citrus, umami, and balances the fried tofu. Freshness is provided in the form of a cool cilantro chutney akin to what you would get with a samosa. Every bite you get a little slaw, some melt-in-your-mouth soft lentils, and the creamy curry. The curry provides a turmeric and cinnamon note that grounds the dish with warmth and comfort and the chutneys keep it light and fresh.
If you are reading this - you owe it to yourself to try this!

Good food for an airport. Solid local beer selection and lamb sliders were great. Service quality was pretty mixed; the hostesses at the front weren’t welcoming at all (literally just stared at me when I approached) and the guy at the bar wasn’t very friendly with customers (but was joking around and nice with other employees). Probably the best option at the airport.

Their salads are wonderful - very large, fresh, and a great mix of flavors. Always friendly fast service.
Lots of ways to make your breakfast vegetarian. Husband had the decadent French toast. I had veggie burrito with veggie chorizo.
